Plus it’s super easy to make and only takes a few minutes to get it in the freezer. There’s no complicated steps, egg yolks or fuss like pistachio churn ice creams usually require. The Ninja Creami makes it so simple.

Ingredients

  • Milk: Milk is the base of this recipe. I recommend using at least 2% milk for the best creaminess or you can use whole milk. I personally love to use a higher protein ultra filtered milk like Fairlife to add a little more nutrition and plenty of creaminess. You can also use a plant-based milk like oat milk or coconut milk.
  • Heavy Cream: Just 2 tablespoons of heavy cream gives the ice cream an extra creamy consistency! The cream actually brings out the sweetness without adding additional sugar to this flavorful treat.
  • Pistachio pudding mix: Instant pudding mix gives this ice cream the iconic green color and flavor (which actually comes from almond extract). It also helps keep the texture of the ice cream softer and creamier. You can use regular or sugar free pudding mix for a lower sugar ice cream. This adds lots of flavor but you can also add a splash of vanilla extract.
  • Pistachios: At the end we add chopped pistachios in for more flavor and a fun crunch! If you can find the lightly salted version I recommend it, but any shelled pistachios will work fine.
  • Optionally you can add 1-2 teaspoons for sugar, honey or maple syrup to customize this recipe if you like an extra sweet treat.

How to make Ninja Creami pistachio ice cream

  1. Add all ingredients to the Ninja Creami pint container except for the chopped pistachios. Whisk until ingredients are thoroughly combined. Note: I recommend taste testing at this step to make sure that your mixture is sweet enough for you. If needed, add a teaspoon of additional sweetener like table sugar, maple syrup or honey.
  2. Freeze for 24 hours.

  1. Run lite ice cream mode x1.
  2. Run respin mode x2. (If the mixture is still crumbly at this point, use a very small splash of milk- about a tablespoon of milk and spin a final time)

  1. Create a small opening in the center of the ice cream pint and add pistachios. Run mix-in mode x1.

  1. Top with your favorite toppings and enjoy!

How to store

Store leftovers in the Ninja Creami container with the lid secured in the freezer for up to 1 week. Level off the top of the ice cream before freezing. Let it sit out for 10-15 minutes before serving or use the re-spin function.

Variations

  • Add a scoop of either vanilla protein powder or chocolate protein powder for a higher protein treat.
  • Add mini chocolate chips or chocolate chunks as a mix-in for a pistachio chocolate chip ice cream. White chocolate chips would be delicious too.
  • Use whole milk or heavy cream if you want a fuller fat, super creamy ice cream.
  • Mix in a scoop of fluff for a marshmallow swirl pistachio ice cream.
  • Use vegan ingredients. Swap out the dairy for your favorite plant based milk + 2 tbsp coconut cream or Country Crock plant cream.
  • For even more nutty flavor top with a drizzle of pistachio butter or some additional chopped pistachios for a nice crunch.
  • Mix up the toppings, add whipped cream and chocolate sauce for a fun pistachio sundae!

Ingredients

  • 1 1/2 cups milk at least 2%, I like to use Fairlife

  • 2 tbsp pistachio instant pudding mix sugar-free or regular
  • 2 tbsp pistachios chopped
  • 1-2 tsp honey or maple syrup optional if you prefer a sweeter ice cream

Notes

If your ice cream is too crumbly you can always soften it by adding a small splash of milk- I recommend only doing 1 tsp to 1 tbsp at a time because a little goes a long way!
