This black bean corn feta dip is the perfect dish for a side, snack, or an easy appetizer for summer gatherings! It’s made with nutritious, fresh ingredients like sweet corn, hearty black beans, veggies and crumbled feta cheese tossed in a light lime dressing. Serve with tortilla chips!

It’s made with wholesome, simple ingredients and packed with nutrients too- one serving has 8 grams of protein and 6 grams of fiber.

You can also easily turn this black bean and corn dip into a meal by serving over a bed of shredded lettuce or greens and topping with grilled chicken, sliced steak or even shrimp.

This delicious dip stores really well and is just as good the next day, making it a great recipe to prep ahead for the week.

Ingredients

  • Black beans: You can’t make black bean dip without the black beans. They’re a good source of fiber and protein to help make this dip filling.
  • Corn: You can use fresh corn, canned corn or even frozen for this recipe- just cook and cool beforehand. My favorite is to grill a fresh cob and slice the corn kernels off.
  • Bell Pepper + sweet onion: Red bell pepper adds a burst of color and crunch. Any color will work- orange, yellow or green bell pepper are a great choice too. For onion, red onion or spring onions would work great too.
  • Fresh cilantro: The fresh flavor of cilantro pairs perfectly with the beans, corn and lime juice. It also adds a beautiful green pop of color keeping this dip looking fresh.
  • Feta cheese: Tangy feta cheese is a nice contrast to the mellow flavor of the corn and beans. You could also use cubed cheddar, shaved parmesan or even goat cheese.

Dressing ingredients

  • Lime juice: Fresh lime juice adds citrus flavor and brightness to the dressing.
  • Garlic: I like to microplane garlic for dressings so that it blends right into the dressing.
  • Olive oil: A little olive oil helps the dressing emulsify and adds heart-healthy unsaturated fats.
  • Honey: A bit of honey adds the perfect amount of sweetness to balance the dressing flavors!
  • Salt + black pepper to taste

Step 1: Add all dip ingredients to a large bowl.

Step 2: In a small bowl combine all dressing ingredients, whisk until combined.

Step 4: Mix well until fully combined. Serve with tortilla chips and extra lime wedges!

How to store

Store leftovers in an airtight container in the fridge for up to 3-4 days. Before serving, give a good stir to re-distribute the dressing or freshen up with a squeeze of fresh lime juice.

Variations

  • Change up the dressing flavors with lemon juice and parsley instead of lime and cilantro. Maple syrup can be swapped in for the honey as well.
  • Instead of limes, swap in your favorite vinegar like white wine vinegar, red wine vinegar or apple cider vinegar.
  • Swap in different beans – pinto beans, back eyed peas or kidney beans work well too. The best part is that this is a super versatile dip, you can use whatever you have.
  • Mix up the cheese – cotija cheese or queso fresco are a great swap for the feta and pair perfectly with the lime juice and cilantro.
  • Add in more fresh vegetables – diced roma tomatoes, green onions, cucumber are great additions to this fresh dip.
  • Go for a spicy version – add diced fresh or pickled jalapeño.
  • Serving a big crowd? Make a double batch!

Ingredients 

  • 15 oz. can black beans, rinsed and drained
  • 2 cups corn, cooked and cooled from cob or frozen
  • 1 red bell pepper, diced (about 1 cup)
  • 1/2 cup sweet onion, diced
  • 1/4-1/3 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled

Dressing ingredients

  • 2 limes, juiced
  • 1 clove garlic, finely minced or microplane
  • 2 tbsp olive oil
  • 1 tbsp honey, more to taste
  • salt + black pepper to taste, start with a pinch each

Instructions 

  • Add all dip ingredients to a large bowl.
  • In a small bowl combine all dressing ingredients. Whisk until combined.
  • Pour dressing over the dip and toss to combine. Enjoy with tortilla chips.
