Black Bean Corn Feta Dip
Black beans, sweet corn and tangy feta cheese in a fresh veggie dip tossed in a light lime vinaigrette. Perfect for tortilla chips!

Ingredients
15 oz.
can
black beans
rinsed and drained

cups
corn
cooked and cooled from cob or frozen
1
red bell pepper
diced (about 1 cup)
1/2
cup
sweet onion
diced
1/4-1/3
cup
cilantro
chopped
1/2
cup
feta cheese
crumbled
Dressing ingredients
2
limes
juiced
1
clove
garlic
finely minced or microplane
2
tbsp
olive oil
1
tbsp
honey
more to taste
salt + black pepper to taste
start with a pinch each
Instructions
Add all dip ingredients to a large bowl.
In a small bowl combine all dressing ingredients. Whisk until combined.
Pour dressing over the dip and toss to combine. Enjoy with tortilla chips.
Notes
Feel free to use fresh grilled corn, frozen (cooked) corn, or canned corn.
