This strawberry peach cobbler is packed with ripe strawberries and juicy peaches then topped with a light golden brown whole wheat topping. You don’t want to miss this easy, lightened up version of a summer classic.

Sweet Peach and Strawberry Summer Cobbler

This sweet strawberry peach cobbler recipe has the best texture, a jammy fruit filling and a soft, moist baked topping. Top it off with a scoop of Ninja Creami Vanilla Ice Cream or Ninja Creami Strawberry Ice Cream!

  • So easy. This dessert couldn’t be easier with just a few minutes of prep time. The topping is mixed up in one bowl and poured over the fruit right in the baking dish.

Filling ingredients

  • Peaches: Firm but ripe fresh peaches work best for this recipe.
  • Strawberries: Fresh strawberries in season are always the sweetest if you can get them!
  • Lemon juice: A squeeze of lemon juice brightens the fruit flavors.
  • Brown sugar: Just a little brown sugar sweetens up the fruit filling just enough.

Topping Ingredients

  • Whole wheat pastry flour: This is my favorite whole wheat flour for a moist, soft topping like this one because regular whole wheat is a little dense. You can also use whole wheat or “golden wheat”. All purpose flour works too!
  • Brown sugar + cinnamon: It doesn’t take much sugar to sweeten up this cake-like biscuit topping, and cinnamon is the perfect flavor comparison.
  • Vanilla: Vanilla extract is a must for this sweet topping.
  • Butter: This recipe uses butter but a lot less than most cobbler recipes to keep that classic cobbler flavor.
  • Milk: To add moisture to keep the batter soft and tender.
  • Baking powder and salt: These baking essentials help keep the topping light, fluffy and flavorful.

Variations

  • Use one fruit. Use all peaches or all strawberries for a peach or strawberry cobbler.
  • Mix up the fruit. Make it a cherry cobbler using fresh pitted cherries, blueberries or a mix of your favorites.
  • Make it a crumble instead. Swap out the topping for the crumble topping I use in my Mixed Berry Crumble.
  • Make it vegan. Use a plant-based butter stick and dairy-free milk to make this vegan.
  • More lemon flavor. Add a teaspoon of lemon juice to amp up the bright lemon flavor. This works especially well if your fruit is super ripe and sweet!

How To Make Strawberry Peach Cobbler

  1. Add fruit. Add strawberry and peach slices to a non-stick 9×13” baking dish (spray with cooking spray if not non-stick).

  1. Mix with brown sugar and lemon juice. Add lemon juice and brown sugar to the dish and combine gently with fruit.

  1. Mix wet ingredients for topping. In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.

  1. Finish cobbler topping. Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine flour mixture with wet ingredients until a smooth batter forms.

  1. Top with batter. Spoon or pour batter evenly over fruit.

  1. Bake. Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling. Serve with a scoop of vanilla ice cream!

How to Store

Store leftovers in an airtight container in the fridge for up to 4 days. Pop it into the microwave for 20-40 seconds if you like it served warm, but honestly it’s great cold too!

Tips for Success

  • Use fresh fruit. Fresh fruit works best for this recipe. If you use canned or frozen, you have to make sure the fruit is thawed and you remove as much liquid as possible first.
  • Choose ripe fruit. Sweet peaches and strawberries are the key to this cobbler, so you’ll have the best results choosing ripe, sweet fruit. Peaches should have a slightly soft texture and sweet aroma.
  • Let it cool. Give the cobbler a chance to cool down so that the fruit filling has time to thicken up. It will be a little thin right out of the oven.

Strawberry Peach Cobbler

Ingredients 

  • 3 cups sliced peaches
  • 3 cups sliced strawberries
  • 2 tsp lemon juice
  • 2 tbsp brown sugar

Topping

  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions 

  • Preheat oven to 350 degrees F.
  • Add sliced fruit into a 9×13” baking dish and lightly grease with butter, oil or cooking spray. Add peaches, strawberries, lemon juice and brown sugar to the dish and combine gently.
  • In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.
  • Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine all ingredients together until a smooth batter forms.
  • Spoon or pour batter evenly over fruit.
  • Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling.

Notes

Make sure to choose sweet, ripe fresh fruit! Peaches should be soft with a little firmness and have a slight sweet aroma. Strawberries should be firm with a slight sweet strawberry aroma.
If you can’t find whole wheat pastry flour, all purpose flour or white whole wheat flour (golden wheat) will also work.
