Add sliced fruit into a 9x13” baking dish and lightly grease with butter, oil or cooking spray. Add peaches, strawberries, lemon juice and brown sugar to the dish and combine gently.
In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.
Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine all ingredients together until a smooth batter forms.
Spoon or pour batter evenly over fruit.
Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling.
Notes
Make sure to choose sweet, ripe fresh fruit! Peaches should be soft with a little firmness and have a slight sweet aroma. Strawberries should be firm with a slight sweet strawberry aroma.If you can't find whole wheat pastry flour, all purpose flour or white whole wheat flour (golden wheat) will also work.
