Easy Strawberry Peach Cobbler

This strawberry peach cobbler is one of my favorite summer desserts because it lets the fruit be the star. Sweet peaches, juicy strawberries, and a golden cobbler come together in a dessert that’s cozy and satisfying without feeling overly heavy. It’s the kind of recipe I make every peach season when I want something simple that still feels special.

When peaches are in season, it’s the best time to make an easy peach cobbler. Instead of covering them with lots of sugar or a heavy topping, I like letting the peaches and strawberries be the focus while adding just enough buttery cobbler topping to make it feel like a true summer dessert.

This recipe has become one of my favorite ways to use fresh summer fruit because it’s simple, cozy, and lets those seasonal flavors shine. If you’re expecting a crisp with crunchy oat topping, this is different. Cobbler has a soft, biscuit-like topping that bakes right over the fruit.

A Summer Cobbler That Lets the Fruit Shine

This strawberry peach cobbler has a juicy jammy fruit filling and a soft golden cobbler topping that’s perfect for soaking up all those sweet summer juices. It’s has everything I love about a classic cobbler including a juicy fruit filling, buttery topping, and just enough sweetness.

When peaches are perfectly ripe, they bring so much natural sweetness on their own, so you don’t need a lot of sugar or butter.

Filling

  • Peaches: Fresh, ripe peaches are the star of this recipe. Look for peaches that smell fragrant and give slightly when gently squeezed. For more tips on choosing peaches, see the section below.
  • Strawberries: Peak-season strawberries give the best flavor, but frozen strawberries work in a pinch. If using frozen strawberries, expect the filling to be a little juicier since they release more liquid as they bake.
  • Lemon juice: A squeeze of lemon juice brightens the fruit and helps balance the sweetness.
  • Brown sugar: One of my favorite things about this recipe is that it doesn’t rely on lots of added sugar. Ripe summer fruit does most of the work, and the brown sugar simply enhances its natural sweetness.

Cobbler Topping

  • Whole wheat pastry flour: This is my favorite flour for cobblers because it adds a little extra nutrition while still creating a soft, tender topping. If you don’t have it, all-purpose flour works perfectly.
  • Butter: I use less butter than many traditional cobbler recipes, but there’s still enough to create that classic buttery flavor and golden topping.
  • Milk: Milk keeps the batter moist and helps create a soft, cake-like cobbler topping.
  • Vanilla, cinnamon, baking powder, and salt: These pantry staples round out the topping with warm flavor and help it bake up lighter and tender.

Choosing the Best Peaches for Cobbler

The best cobbler starts with great peaches. I’ve found that peaches that are ripe but still firm give the best texture because they soften as they bake without completely falling apart.

If your peaches are rock hard, they’ll stay fairly firm even after baking. On the other hand peaches that are very soft or bruised tend to break down into the filling.

I usually use yellow peaches because I love their bright, sweet flavor, but white peaches work well too if that’s what you have.

If fresh peaches aren’t in season, frozen peaches are a great backup. I prefer fresh when they’re in season, but frozen peaches are surprisingly good in cobblers because baking softens them anyway. Just thaw and drain them first so the filling doesn’t become too watery.

Whether or not to peel the peaches is completely up to you. I usually leave the skins on because they soften during baking and save a little prep time, but peeling gives the filling a smoother texture if that’s your preference.

Variations to Try

  • Add more berries. Blueberries, raspberries, or blackberries pair beautifully with the peaches and strawberries. Use them in place of some of the strawberries or add an extra handful for a mixed berry peach cobbler.
  • Make it extra lemony. Stir 1 teaspoon of fresh lemon zest into the fruit filling for an even brighter summer flavor. I especially love this when my peaches are extra sweet.
  • Add a hint of almond. Stir 1/4 teaspoon almond extract into the filling for a flavor that pairs well with peaches.
  • Try a crumble topping instead. If you prefer a crisp, buttery streusel over a soft cobbler topping, use the crumble topping from my Mixed Berry Crumble instead.

How To Make Strawberry Peach Cobbler

  1. Add fruit. Add strawberry and peach slices to a non-stick 9×13” baking dish (spray with cooking spray if not non-stick).

  1. Mix with brown sugar and lemon juice. Add lemon juice and brown sugar to the dish and combine gently with fruit.

  1. Mix wet ingredients for topping. In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.

  1. Finish cobbler topping. Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine flour mixture with wet ingredients until a smooth batter forms.

  1. Top with batter. Spoon or pour batter evenly over fruit.

  1. Bake. Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling. Serve with a scoop of vanilla ice cream!

Tips for Cobbler Success

  • Bake until the filling bubbles. Don’t judge doneness by the topping alone. The cobbler is ready when the top is golden and the fruit is bubbling around the edges.
  • Don’t skip the resting time. The filling will be quite bubbly and loose when it first comes out of the oven. Let the cobbler cool for 10-15 minutes before serving so the juices have time to thicken.
  • Serve it warm. My favorite way to enjoy this cobbler is still slighly warm with a scoop of vanilla ice cream.

Serving Suggestions

This cobbler is best served warm while the fruit is still bubbly and the topping is soft. My favorite way to enjoy it is with a scoop of vanilla ice cream melting into the warm fruit, but it’s just as delicious with whipped cream or a dollop of Greek yogurt for breakfast the next morning. If you’re serving it for a summer cookout, fresh mint makes a simple but beautiful garnish.

How to Store

Store leftover strawberry peach cobbler covered or in an airtight container in the fridge for up to 4 days.

I usually reheat individual servings in the microwave for about 20-40 seconds, but it’s honestly delicious cold straight from the fridge too.

Easy Strawberry Peach Cobbler with a Golden Topping

Ingredients 

  • 3 cups sliced peaches
  • 3 cups sliced strawberries
  • 2 tsp lemon juice
  • 2 tbsp brown sugar

Topping

  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions 

  • Preheat oven to 350 degrees F.
  • Add sliced fruit into a 9×13” baking dish and lightly grease with butter, oil or cooking spray. Add peaches, strawberries, lemon juice and brown sugar to the dish and combine gently.
  • In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.
  • Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine all ingredients together until a smooth batter forms.
  • Spoon or pour batter evenly over fruit.
  • Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling.

Notes

  • Ripe fruit makes all the difference. Choose peaches that give slightly when gently squeezed and fragrant strawberries for the best flavor.
  • If using frozen peaches, thaw and drain them. This prevents excess liquid.
  • Let the cobbler rest for 10-15 minutes before serving. This gives the fruit filling time to thicken as it cools.
  • Whole wheat pastry flour creates the softest topping. All-purpose flour also works. 
  • This cobbler is best served warm. Add a scoop of vanilla ice cream, whipped cream, or Greek yogurt.
