Easy Strawberry Peach Cobbler with a Golden Topping
This strawberry peach cobbler has a juicy fruit filling and a soft, golden topping with less butter and sugar than many traditional cobblers, letting the fresh summer fruit take center stage.
Add sliced fruit into a 9x13” baking dish and lightly grease with butter, oil or cooking spray. Add peaches, strawberries, lemon juice and brown sugar to the dish and combine gently.
In a medium bowl mix brown sugar, milk, melted butter and vanilla. Mix until combined.
Add whole wheat pastry flour to the bowl and then sprinkle baking powder, salt, and cinnamon. Combine all ingredients together until a smooth batter forms.
Spoon or pour batter evenly over fruit.
Bake for 25-35 minutes until topping is golden brown and fruit is soft and bubbling.
Notes
Ripe fruit makes all the difference. Choose peaches that give slightly when gently squeezed and fragrant strawberries for the best flavor.
If using frozen peaches, thaw and drain them. This prevents excess liquid.
Let the cobbler rest for 10-15 minutes before serving. This gives the fruit filling time to thicken as it cools.
Whole wheat pastry flour creates the softest topping. All-purpose flour also works.
This cobbler is best served warm. Add a scoop of vanilla ice cream, whipped cream, or Greek yogurt.
