Why you’ll love this

This homemade blueberry ice cream is the perfect dessert for warm day. It’s so simple to make, a great lighter ice cream option, and it’s packed with fresh blueberry flavor.

As a Registered Dietitian I love that this ice cream has a blueberry base because eating more blueberries comes with health benefits from fiber and antioxidants. In fact, you can see those antioxidants in the vivid purple color of the ice cream!

When you pair those fiber-rich blueberries with protein from milk you’ve got a healthy sweet treat that’s balanced with nutrients unlike most traditional ice cream. It’s lower in added sugar, too!

This super easy recipe uses just four simple ingredients. You’ll blend them together (I also love the Ninja Blender System) and then freeze in your pint container before spinning in the Ninja Creami Ice Cream Maker.

It’s the perfect treat to enjoy on hot summer days all season long because blueberries will be in season!

Ingredients

  • Blueberries: Blueberries give the ice cream great blueberry flavor, fiber and antioxidants. You can use fresh or frozen blueberries if fresh aren’t in season at your grocery store!
  • Milk: I recommend at least 2% milk to keep the texture creamy and delicious. If you use an ultra-filtered milk (like Fairlife), you’ll also get added protein packed in too. Whole milk or dairy-free milk like oat milk will work great too.
  • Pudding mix: Vanilla instant pudding mix adds a little sweetness and makes this ice cream have the perfect creamy texture. You can use sugar free pudding mix for an even lower sugar ice cream.
  • Lemon juice: A tiny splash of fresh lemon juice enhances the flavor and natural sweetness of fresh blueberries, adding just the right amount of tart.
  • Optional Sweeteners: Always taste the ice cream base before you freeze it. If needed, you can add a few teaspoons of additional sweetener like maple syrup, honey, agave syrup or use a sugar substitute depending on your taste preference.

Recipe FAQ

What should I do if my ice cream seems crumbly?

I like to spin light ice creams 3 times so that they’re nice and creamy. I find that they can still be a little crumbly after just 2 spins. If needed, you can add about a tablespoon of milk or liquid to help the ice cream get creamy.

Can you use frozen blueberries?

Yes, absolutely! Fresh or frozen berries will both work great here since they’re blended in the blender beforehand. You’ll get a deeper blueberry color if you use frozen.

Variations

  • Mix in wild blueberries after the final re-spin step for fun blueberry bursts in your ice cream.
  • For a blueberry cheesecake ice cream flavor add 1 tbsp cream cheese and use 1 for mix-ins.
  • Add 1 tsp vanilla extract or vanilla bean paste to the base before freezing for a blueberry vanilla ice cream.
  • For a blueberry pie ice cream, add a few crumbled Nilla Wafer cookies and whipped cream.
  • Drizzle with melted peanut butter for a sundae with the flavors of peanut butter and jelly.
  • Add a few tablespoons of heavy cream for an even creamier version.
  • For a protein-packed ice cream, mix in a scoop of vanilla protein powder.
