Kodiak Banana Muffins (Higher Protein!)

These Kodiak banana muffins are fluffy and moist and have all of the flavors you want in a banana muffin, but healthier! Each muffin has extra protein and more fiber than traditional banana bread muffins, making them a great choice for a breakfast, healthy snacks or even a dessert option.

These Kodiak Cakes banana muffins are more nutritious than regular muffins with 7 grams of protein and 3 grams of fiber per muffin, but just as delicious!

These are great for a quick breakfast, a grab and go option for snack time, and they’re even great for satisfying your sweet tooth for dessert- they’re going to be your whole family’s new favorite treat!

You only need a few simple ingredients to whip together these delicious muffins, so let’s get into it!

Ingredients

  • Kodiak Cakes Buttermilk Pancake and Waffle mix: You’ll need Kodiak Cake mix– it’s higher protein and made with whole grains like whole wheat flour and oat flour for a higher protein and higher fiber muffin! Any other pancake mix should work, too if you prefer. You an order it on Amazon or find it in most grocery stores.
  • Bananas: You’ll need overripe bananas for these muffins, so grab those brown spotty bananas that are sitting on your counter! Extra ripe bananas have more natural sweetness and are softer than ripe bananas, so it results in a moister and more flavorful muffin.
  • Cinnamon: Cinnamon adds just the right amount of warm cozy flavor to these muffins.
  • Plain Greek yogurt: Greek yogurt adds moisture to these muffins and also ups the protein content!
  • Vanilla extract: Vanilla extract adds flavor and helps to balance the sweetness of these delicious banana bread muffins.
  • Eggs: You’ll need eggs to act as the binding agent to hold these muffins together and add moisture.
  • Maple syrup: Maple syrup goes perfectly with the banana flavor of these muffins, but you can also use honey or brown sugar.
  • Baking powder: Baking powder is essential to give these muffins the perfect fluffy texture.
  • Oil: Any neutral oil will work for these muffins. I typically use avocado oil for baking but you can also use any regular vegetable oil or canola oil.
  • Chocolate chips: Chocolate chips are optional but definitely a favorite addition to make banana chocolate chip muffins! You can use regular semi sweet chocolate chips, mini chocolate chips or even cinnamon or white chocolate chips.

How to make Kodiak banana muffins

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together dry ingredients: Kodiak mix, cinnamon, baking powder.
  3. In a large bowl, mix together bananas, Greek yogurt, vanilla extract, eggs, maple syrup and oil. You can use a hand mixer, whisk, or mix by hand.

  1. Add the dry ingredients to the large bowl with wet ingredients and mix until just combined. Add chocolate chips and gently fold in.

  1. Fill a muffin tin with cupcake liners or silicone muffin pan evenly with muffin batter (I like to use a large cookie scoop). Top with additional chocolate chips if desired.

  1. Bake for 20-22 minutes until muffin top is firm and a toothpick or fork comes out clean.

How to store

Store extra muffins in an airtight container for up to a week. You can also put extra muffins into freezer bags and freeze them for up to 2 months!

Variations

  • Drizzle with peanut butter or almond butter before serving.
  • Swap chocolate chips for wild blueberries for a banana blueberry muffin.
  • Add a handful of walnuts or pecans for a banana nut version.
  • Use a mini muffin pan for mini muffins instead (I like to use a silicone muffin pan because the muffins pop right out!).

    These are so tasty- Iโ€™ve made them 3 weeks in a row now! I donโ€™t know if my measurements are off, but I always end up with more than 12 muffins- perfect for me because who doesnโ€™t want more muffins?

    1. So happy you’re loving them! Banana sizes vary so much so it could be that- but in general I’d say that I tend to over fill the cups lol! So, could be that too. Either way I agree- nothing wrong with extra muffins!

    These are just the best! I have tried multiple variations of Kodiak protein muffins and nothing compares. I recently tried a simplified version of a Kodiak protein muffin, that was only 3 steps and completely regretted that choice because they paled in comparison, so I ended up making this version the next day. They are always a hit with my husband and kiddos as well as other kids in the neighborhood lol.
