These Lipton onion soup potatoes taste like your favorite French onion soup in crispy potato form, complete with melty cheese. They’re absolutely delicious and best of all, so easy! This is one of my favorite easy side dishes and I’m confident it will be one of yours too!

Why you’ll love these

This easy recipe combines two amazing foods: roasted potatoes and French onion soup. If you love both of those foods, this is going to be your new favorite way to eat potatoes.

Using a packet of onion soup mix for seasoning not only majorly simplifies this recipe but makes it one of the most flavorful dishes. It has very quickly become one of my favorite recipes (and my entire family too!). The first time I made these they barely made it to our dinner plates!

And PS- potatoes are a nutritious food! So yes, you can add this to your rotation of healthy recipes. One serving of these roasted potatoes has 8 grams of protein and 5 grams of fiber, making them a great side dish for your favorite dinners.

These are great for an easy weeknight side for family dinner plus it’s great for entertaining too! It’s truly one of those recipes that uses such simple ingredients and minimal effort, but it’s so impressively good.

Ingredients

  1. Potatoes: I like gold potatoes, but any type of potato will work! You can use red potatoes, russet potatoes or even sweet potatoes.
  2. Lipton Onion Soup Mix: The secret to these potatoes is a packet of dry onion soup mix from your local grocery store. You can use classic Lipton onion soup mix or any other kind that you have. I also like the Happy Belly soup dry mix.
  3. Garlic: Fresh garlic cloves give these potatoes amazing flavor. You can sub garlic powder if you don’t have any fresh on hand.
  4. Olive oil: I like to use olive oil or avocado oil for these roasted potatoes.
  5. Parmesan cheese: Shaved parmesan helps to give these potatoes that classic onion soup flavor. When the parmesan bakes with the potatoes, it gets melty and crispy and it’s absolutely amazing.
  6. Chives: These potatoes are great even if you don’t have the chives, but they’re an amazing complement to the other flavors.
  7. Black pepper

How to make Lipton onion soup potatoes

  1. Preheat oven to 400 degrees.
  2. In a large bowl, add potatoes, onion soup mix, garlic, black pepper, and olive oil. Toss well until the potatoes are thoroughly and evenly coated.

  1. Add potatoes to a sheet pan lined with parchment paper or sprayed with a little oil or cooking spray. Add potatoes in an even single layer.

  1. Roast for 35-45 minutes in the oven until crispy and golden brown on the outside and soft on the inside. Gently mix halfway through.

  1. Add shaved parmesan cheese and return to the oven for 2-3 minutes until cheese is melted. If you like the parmesan to get crispy, add a few extra minutes of cookign time. Top with chives and serve.

How to store

Store leftover roasted potatoes in an airtight container for up to 4 days. These reheat great in the microwave but you can also reheat in the air fryer or oven.

These French onion potatoes are such a great side dish for just about anything, but here’s a few recipes I love to serve them with:

Another one of my favorite ways to serve this easy side dish recipe is with store-bought rotisserie chicken and quickly air-fried broccoli for one of the most delicious simple meals.

Variations

  • Change up the cheese- other cheeses that would go great are Gruyère, provolone, or swiss cheese. Shredded parmesan instead of shaved is also a great option.
  • Use this recipe for any other roasted veggies, like squash or even cauliflower.
  • Top with other fresh herbs like parsley, thyme or rosemary.
  • Roast with sliced yellow onion, red onion or sweet onion.
  • Serve with sour cream or Greek yogurt.

  • 6 medium potatoes, cubed
  • 1 envelope lipton onion soup mix, or any brand of onion soup mix
  • 4 garlic cloves, finely minced
  • 1/4 tsp black pepper, more to taste
  • 2 tbsp olive oil, or avocado oil
  • 1/2-1 cup parmesan cheese, shaved
  • chives, for serving
