Ingredients

  • Whole Wheat Bread: Cubed bread gives a fun look and texture to the muffins, plus added fiber to keep you full! If you aren’t a fan of whole wheat bread feel free to swap in your favorite bread. Make sure to avoid thin sliced breads because the slices won’t have enough volume to fill the tins.
  • Eggs: Whole eggs add both structure and protein to these muffins!
  • Milk: I like to use 2% or whole milk but any milk you prefer will work here. Milk is an essential part of the custard mixture for these muffins and traditional french toast.
  • Maple Syrup: Real maple syrup provides just enough sweetness and breakfast flavor to these muffins. You can swap it out for sugar free syrup if desired.
  • Vanilla Extract: Vanilla compliments the warmth and sweetness of the cinnamon sugar in these muffins.
  • Cinnamon: This spice offers a warm flavor and is the key traditional flavor for french toast.

Topping ingredients

  • Brown sugar + cinnamon: Brown sugar adds the perfect flavor and texture to the top of these muffins- you can also use a combination of white and brown sugar. Extra cinnamon on top ties the flavor of the muffins together.

How to make cinnamon sugar french toast muffins

  1. Preheat oven to 350 degrees F. Prepare a 12 muffin tin with non-stick spray or lightly coat with oil. You can also use a silicone muffin pan.
  2. Mix the topping ingredients together in a small bowl.

  1. In a large bowl whisk together eggs, milk, syrup, vanilla extract, cinnamon, and salt until uniformly combined.
  2. Toss bread cubes gently in the egg and milk mixture with a rubber spatula until the bread has absorbed the mixture evenly.

  1. Scoop bread mixture into the prepared muffin tin, distributing the bread evenly into each muffin. Sprinkle cinnamon sugar topping evenly over the tops of the muffins.

  1. Bake for 25-30 minutes, until the tops feel crisp. Allow to cool for 10 minutes in the pan. Use a butter knife to loosen the muffins from the pan and remove. Serve warm.

How to store

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat for 20-30 seconds in the microwave or air fry at 350 degrees F for 3-5 minutes for best results.

Variations

  • Serve with a drizzle of maple syrup or a dusting of powdered sugar
  • Make it a balanced breakfast by adding fresh berries and Greek yogurt.
  • Add chopped nuts (walnuts, pecans, etc) before baking.
  • Make it a blueberry muffin by adding in ½-¾ cup of berries into the bread mixture.
  • Try a streusel topping. Add 1 tbsp flour and 1 tbsp melted butter to the topping and mix to form crumbles before sprinkling over the muffins

  • 12 slices whole wheat bread, sliced into 12 cubes each, choose a thick slice whole wheat bread
  • 4 eggs
  • 1.5 cups milk
