1.5cupsmilk
3tbspmaple syrup
1tbspvanilla extract
1tspcinnamon
1pinchsalt
Topping
3-4tbspbrown sugaror mix of white and brown sugar
1/2tspcinnamon
maple syrup and/or powdered sugar for serving
Instructions
Preheat oven to 350 degrees F. Prepare a 12 muffin tin with non-stick spray or lightly coat with oil.
Mix the topping ingredients together in a small bowl.
In a large bowl whisk together eggs, milk, syrup, vanilla extract, cinnamon, and salt until uniformly combined.
Toss bread cubes gently in the egg and milk mixture with a rubber spatula until the bread has absorbed the mixture evenly.
Scoop bread mixture into the prepared muffin tin, distributing the bread evenly into each muffin. Sprinkle cinnamon sugar topping evenly over the tops of the muffins.
Bake for 25-30 minutes, until the tops feel crisp. Allow to cool for 10 minutes in the pan. Use a butter knife to loosen the muffins from the pan and remove. Serve warm.
