If you’ve ever felt burned out on overly sweet breakfasts, these savory overnight oats are such a refreshing change of pace. This savory oatmeal recipe is inspired by everything bagel flavor and topped with creamy avocado, jammy egg, juicy tomatoes, and fresh scallions for a breakfast that feels hearty and complete.

The combination of Greek yogurt, oats, and parmesan creates an extra creamy texture, while the everything bagel seasoning adds a familiar garlicky, onion-packed flavor that makes each bite taste savory. They have the convenience of traditional overnight oats, but with a flavor profile that feels closer to avocado toast than a cold bowl of oatmeal.

For full recipe instructions and complete list of ingredients, scroll down to the recipe card at the bottom of this page.

  • Old fashioned oats: Old fashioned oats work best because they soften overnight while still keeping a little texture. Quick oats tend to become too soft and mushy.
  • Greek yogurt: Makes the oats extra creamy while adding protein and a slight tang that balances the savory flavors.
  • Milk: Softens the oats as they chill overnight. Any dairy or dairy-free milk works well here.
  • Everything bagel seasoning: This is what gives the oats the signature savory flavor. The garlic, onion, sesame, and salt make the oats taste much more satisfying and meal-like.
  • Parmesan cheese: Parmesan adds a subtle salty, nutty flavor that pairs especially well with the everything bagel seasoning.
  • Toppings (optional): Soft boiled egg, avocado, scallions, cherry tomatoes, and microgreens are great savory topping topping options.

Variations to Try

  • Add greens: Top with spinach, arugula, or kale instead of microgreens for extra freshness. Sautéed greens work great too. Or fresh herbs for even more flavor.
  • Swap the cheese: Try feta or goat cheese for a tangier savory flavor.
  • Make them even more savory: Add crispy turkey bacon, crumbled bacon, or more savory oatmeal toppings on top.
  • Add some heat: Top with red pepper flakes, chili crisp, or a drizzle of hot sauce.
  • Switch up the eggs: Add a fried egg, poached egg, or soft-boiled egg.
  • Try a Mediterranean-inspired version: Add diced cucumbers, fresh dill, and feta for a Mediterranean-style twist.
  • Use cottage cheese instead of Greek yogurt: Cottage cheese creates a slightly different texture while adding even more protein.
  • Turn them into warm savory oatmeal: If you prefer warm oats, heat the mixture before adding toppings for more of a savory oatmeal bowl.

Jamie’s Tips

Expert Recipe Tips

  • Mix everything very well before refrigerating. This helps evenly distribute the parmesan and everything bagel seasoning throughout the oats.
  • Taste before chilling. Everything bagel seasonings can vary quite a bit in saltiness, so adjusting the seasoning beforehand makes a big difference.
  • Let the oats chill long enough. For the best creamy texture, refrigerate the oats for at least 4 hours, ideally overnight.
  • Adjust the texture before serving if needed. If the oats thicken too much overnight, stir in a splash of milk to loosen them up and add extra creaminess.
  • Don’t skip the toppings. The savory toppings make the oats feel much more like a complete savory breakfast bowl. Add fresh toppings right before serving.

FAQs

What do savory overnight oats taste like?

Savory oatmeal has a creamy texture similar to traditional oats, but with savory flavors instead of sweetness. This version tastes a little like everything bagel seasoning, parmesan, and avocado toast combined.

Are savory overnight oats eaten cold?

Yes. They are especially refreshing cold, but if you prefer a warm breakfast, you can gently heat them before adding the toppings.

Will the oats be mushy?

They don’t get mushy if you use old fashioned rolled oats. They soften overnight while still keeping a pleasant texture.

Can I make these ahead for multiple days?

Absolutely! The oat base keeps well for up to 3 days in the refrigerator. For the freshest texture, add toppings right before serving.

How to Store

Store the savory overnight oats in an airtight container or jar in the refrigerator for up to 3 days. This recipe works especially well as a single serving meal prep breakfast option. For the freshest texture, keep toppings separate until ready to serve.
