This mango vinaigrette salad dressing is sweet, tangy and creamy. It’s made with fresh, flavorful ingredients like fresh mangoes, lime, olive oil and cilantro and one of my favorite things for salads, bowls or grilled proteins.

Mango Vinaigrette: Perfect for Summer

Whether you drizzle this homemade salad dressing on a summer salad, a grain bowl, grilled chicken, or even fruit salads- here’s why you’ll love this recipe:

Ingredients

This mango dressing recipe is made with fresh, simple ingredients. Don’t forget to scroll down to the recipe card for full instructions and ingredients.

  • Mango: Any kind of mango will work, champagne mangoes or ataulfo mangoes (the small yellow ones), or regular mango. The small yellow ones tend to have a tarter mango flesh. You can use frozen mango, but thaw slightly and consume immediately.
  • Cilantro: Fresh cilantro adds fresh herby flavor that works perfectly with the mango and lime.
  • White balsamic vinegar: White balsamic is one of my favorite vinegars because it’s slightly sweet and helps to balance out the fruitiness of the mango!
  • Lime juice: Lime juice adds bright tangy flavor that goes perfectly with cilantro and mango. You could also use lemon juice or orange juice.
  • Extra virgin olive oil: Olive oil helps adds healthy fats and helps it blend into a silky smooth texture. Avocado oil is another one of my favorites to use.
  • Spices: Salt, black pepper and just a touch of chili powder adds the perfect amount of seasoning and warmth to this dressing.
  • Optional sweetener: If you don’t find it sweet enough you can add a drizzle of honey or maple syrup.

How to Make Mango Vinaigrette

1. Add ingredients to a blender: Add all ingredients except cilantro to a high speed blender.

2. Blend until smooth: Blend on high for about 1 minute, stopping to scrape the sides as needed.

3. Add cilantro: Next, add cilantro to the blender.

4. Pulse cilantro: Pulse blender 3-4 times to blend cilantro in (I like to blend it but still be able to see green flecks!).

How to store

Pour into a small mason jar or other airtight container to store for up to 4 days.

What To Put It On

  • A simple summer salad: Drizzle on greens with sliced strawberries, red onion and feta cheese.
  • Grain salads or bowls: Use as the dressing for a bowl of rice or quinoa, cucumbers, greens, shredded chicken and sliced green onions.
  • Grilled protein or veggies: Drizzle on grilled chicken, fish, or even grilled veggie skewers.
  • Shrimp tacos: Serve on shrimp tacos with avocado, black beans and shredded lettuce or cabbage.

Variations

  • Mango ginger dressing: For a ginger kick, add a 1/2 tsp of grated or minced fresh ginger.
  • Spicy mango salad dressing: Add a pinch of cayenne pepper, red pepper flakes or a few slices of fresh jalapeño to the blender.
  • Use different herbs: Instead of cilantro you can also use fresh mint, basil or parsley.
  • Experiment with vinegars: Use white wine vinegar, red wine vinegar or apple cider vinegar instead of white balsamic.

Mango Vinaigrette

Ingredients 

  • 1 cup mango, cubed
  • 3 tbsp water
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp white balsamic vinegar
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp chili powder
  • 2 tbsp cilantro leaves
  • optional: maple syrup or honey to taste

Instructions 

  • Add all ingredients except cilantro to a high speed blender, blend on high for about 1 minute, stopping to scrape down sides as needed.
  • Add cilantro and pulse blender 3-4 times to incorporate.
  • Pour into a jar or other airtight container to store.
