Where to find hot honey
You should be able to find hot honey at your local grocery store near the regular honey (sometimes it will be called spicy honey). Or, you can order it online(I love Mike’s Hot Honey). If you don’t have any, you can also use regular honey and add red pepper flakes instead.
Step-by-step instructions
- Preheat your oven to 425 degrees.
- Add sliced carrots to a mixing bowl and add hot honey, olive oil, salt and pepper. Toss to coat evenly.
- Next, line a baking sheet with parchment paper or use a silicone baking mat. Add the carrots in a single layer.
- Bake for 20-30 minutes until carrots are golden brown and have a caramelized texture. Sprinkle feta cheese, parsley and chives on top before serving. Optional: drizzle carrots with more hot honey before serving!
Storage info: Store in an airtight container for up to 5 days. To freshen it up, add a drizzle of hot honey and fresh feta cheese before serving.

Can I use regular honey?
If you’re not a fan of spicy flavors you can definitely use regular honey or maple syrup. If you want it to be a little less spicy, you can also use regular honey and then add as much red pepper flakes, chili powder or hot sauce to meet the heat level you prefer!
Can I use baby carrots?
I prefer to use whole carrots and then slice them, but you can use any type of carrots you want. If you use baby carrots, you may need to adjust your cooking time to be slightly longer. Check for doneness by making sure the carrots are easily pierced with a fork.
