  • Chicken breast: You’ll need cooked and shredded chicken breasts for this casserole (my Air Fryer Shredded Chicken is a super easy option). For a major time saver, use rotisserie chicken.
  • Bacon: Crispy bacon crumbles mixed throughout this delicious casserole and sprinkled over the top add the perfect flavor. I like to use turkey bacon too!
  • Frozen cauliflower: Cauliflower chopped into bite-sized pieces adds dietary fiber and volume to this recipe keeping it a balanced one dish meal.
  • Plain Greek yogurt: The creamy Greek yogurt base is lighter than using all cream cheese, sour cream or cream of chicken soup and adds protein.
  • Cream cheese: Just a few ounces of cream cheese help to make the chicken mixture rich and creamy without needing too much.
  • Ranch Seasoning: You’ll need ranch seasoning mix or ranch dip mix for the ranch part of this casserole. It’s easy and adds tons of creamy ranch flavors.
  • Sharp cheddar cheese: Sharp cheddar goes perfectly with this hearty casserole. A cup of cheddar cheese is mixed in and sprinkled on top.
  • Tater tots: Frozen tater tots make up the topping here and they add so much nostalgia, satisfaction and fun! My favorite is the Alexia brand.

How to Make Chicken Bacon Ranch Tater Tot Casserole

Start the filling: In a large bowl whisk together Greek yogurt, cream cheese and ranch powder. Add cooked cauliflower, shredded chicken, bacon and 1 cup cheddar cheese.

Mix the filling: Mix ingredients together until thoroughly combined.

Add the filling to baking dish: Spread chicken mixture evenly in a large 8×8 or 9×9 baking dish.

Top with tater tots and bake: Top with a single layer of frozen tater tots, covering the filling entirely. Bake for 25 minutes at 425 degrees until tater tots are golden brown.

More cheese and bacon crumbles! Remove from oven and sprinkle evenly with remaining ½ cup of shredded cheese and bacon crumbles. Return casserole to oven and bake for 3-5 minutes until the cheese is melted.

Add toppings and serve. Serve with a drizzle of ranch dressing or a dollop of Greek yogurt or sour cream and a sprinkle of green onions.

How to store

Store leftovers in an airtight container in the fridge for up to 4 days.

Variations

  • Mix up the cheese: Instead of cheddar you could use Colby jack, Monterey Jack, or even mozzarella cheese.
  • Add different veggies: Swap the cauliflower for broccoli, green beans or mixed vegetables instead.
  • Use a different protein: You can swap in any protein that you have including ground chicken, ground turkey, ground beef or even plant-based meat.
  • Sweet potato version: Use sweet potato tots instead of regular!
  • Make it creamier: Swap the ranch seasoning for 1/2 cup of ranch dressing.

Ingredients 

  • 3 cups chicken breast, cooked and shredded
  • 1/2 cup bacon or turkey bacon, crumbled + extra for topping
  • 2 cups frozen cauliflower, cooked (~12 oz package) and chopped
  • 1 cup plain Greek yogurt, full fat
  • 2 oz cream cheese, softened
  • 2 tbsp ranch dip mix
  • 1 1/2 cups sharp cheddar cheese, shredded, divided
  • ~20 oz tater tots, frozen

Instructions 

  • Preheat oven to 425 degrees F.
  • In a large bowl whisk together Greek yogurt, cream cheese and ranch powder.
  • Add cooked cauliflower, shredded chicken, bacon and 1 cup cheddar cheese to the Greek yogurt. Mix to combine.
  • Spread chicken mixture evenly in a large 8×8 or 9×9 baking dish. Top with frozen tater tots, covering the filling entirely. Bake for 25 minutes until tater tots are golden brown. If tater tots are still cold, return to oven for additional time.
  • Remove from oven and sprinkle evenly with remaining ½ cup of shredded cheese and bacon crumbles. Return casserole to oven and bake for 3-5 minutes until the cheese is melted.
  • Top with sliced green onions and a drizzle of ranch dressing if desired. Enjoy!
