1/2cupbacon or turkey baconcrumbled + extra for topping
2cupsfrozen cauliflowercooked (~12 oz package) and chopped
1cupplain Greek yogurtfull fat
2ozcream cheesesoftened
2tbspranch dip mix
1 1/2cupssharp cheddar cheeseshredded, divided
~20 oztater totsfrozen
Instructions
Preheat oven to 425 degrees F.
In a large bowl whisk together Greek yogurt, cream cheese and ranch powder.
Add cooked cauliflower, shredded chicken, bacon and 1 cup cheddar cheese to the Greek yogurt. Mix to combine.
Spread chicken mixture evenly in a large 8×8 or 9×9 baking dish. Top with frozen tater tots, covering the filling entirely. Bake for 25 minutes until tater tots are golden brown. If tater tots are still cold, return to oven for additional time.
Remove from oven and sprinkle evenly with remaining ½ cup of shredded cheese and bacon crumbles. Return casserole to oven and bake for 3-5 minutes until the cheese is melted.
Top with sliced green onions and a drizzle of ranch dressing if desired. Enjoy!
