Light & Creamy Pumpkin Ice Cream

This pumpkin pie ice cream is light, creamy and made with super simple ingredients. It’s the perfect fall ice cream to get you in the fall spirit! Here’s why you’ll love it.

  • Pumpkin pie inspired. If you love all things pumpkin spice like I do, this one’s a must try. It’s made with simple ingredients like real pumpkin puree and pumpkin spice for the perfect amount of fall pumpkin flavor.
  • Lightened up. Unlike traditional ice cream, this recipe is made with mostly milk as the ice cream base instead of all cream and a lot less sugar.
  • Simple. This easy Ninja Creami recipe is mixed up and ready to pop in the freezer in under 5 minutes!

Ingredients

  • Pumpkin puree: Pure pumpkin puree adds color, flavor, fiber and antioxidants to this healthy homemade ice cream. It also helps the ice cream to be nice and creamy.
  • Instant pudding: Vanilla instant pudding mix gives this ice cream the perfect silky texture. Regular or sugar-free both work here, so opt for sugar-free if you’d like a lower sugar ice cream.
  • Pumpkin pie spice: This blend of fall spices adds the traditional flavors you’d expect in this pumpkin ice cream without being overpowering.
  • Milk: 2% milk keeps this recipe light, but feel free to use your favorite milk or milk alternative.
  • Heavy Cream: Just a little bit of heavy cream adds richness,
  • Maple syrup: Honey, brown sugar or your favorite zero sugar sweetener works too! You can also leave the extra sweetener out.

Variations

  • High protein pumpkin ice cream: Add a scoop of vanilla protein powder.
  • Pumpkin cheesecake ice cream: After spinning twice on light ice cream mode, add 2 tbsp of cream cheese and some graham cracker pieces and then run the mix-in mode!
  • Pumpkin ice cream pie: Scoop into a graham cracker crust and smooth evenly. Slice soft or freeze for an hour before slicing and enjoying.
  • Make it vegan: Use a vegan instant pudding mix and a creamy plant based milk. Soy milk, coconut milk or unsweetened almond milk work best. Skip the cream or use Country Crock plant cream instead.

How To Make Ninja Creami Pumpkin Ice Cream

  1. Add ingredients. Add all ingredients to the Ninja Creami pint container.

  1. Mix. Whisk ingredients together until fully combined. Taste test and add additional sweetener if needed.

  1. Freeze. Freeze ice cream mixture for 24 hours on a level surface.

  1. Spin + enjoy! Place pint container in the Ninja Creami outer bowl and secure outer bowl lid with blade onto machine. Run lite ice cream mode x1. Run re-spin x1.

How to Store

Use a spoon to smooth the top of any leftover ice cream and secure pint lid before freezing. Let leftover ice cream sit at room temperature for 10-15 minutes before scooping. Alternatively remove lid and microwave for 10-15 seconds.

Mix-In Ideas

There are so many fun mix-ins you can add to this healthy pumpkin ice cream- here are a few of my favorites:

  • Graham cracker pieces
  • White chocolate chips or dark chocolate chips
  • Gingerbread cookies
  • Walnuts or pecans
  • Peanut butter or almond butter

My Pro Tip

Recipe Tips

  • Mix mix mix. Mix the ingredients really well to prevent clumping. Use a whisk or even an immersion blender.
  • Taste test. Try your mix before you freeze to adjust the sweetness and spices
  • Check the texture. Two spins is usually enough, but if your ice cream is crumbly or you like a softer ice cream, add a tiny splash of milk and run the respin cycle a final time.

Ninja Creami Pumpkin Ice Cream

Equipment

  • 1 Ninja Creami Ice Cream Maker

Ingredients 

  • 3/4 cup pumpkin puree
  • 2 tbsp vanilla instant pudding mix, sugar free or regular
  • 1 1/4 tsp pumpkin pie spice
  • 1 cup milk
  • 2 tbsp heavy cream
  • 1-2 tbsp maple syrup
  • optional mix-in: graham cracker pieces
  • optional: 1 scoop vanilla protein powder

Instructions 

  • Add pumpkin, pudding mix and pumpkin pie spice to a Ninja Creami pint container. Use a small whisk (or spoon) to combine well.
  • Add milk, cream and 1 tbsp maple syrup. Stir again until combined. *Note: Taste test at this step to see if it is sweet enough, add additional tbsp of maple syrup if needed.
  • Freeze for 24 hours on a level surface.
  • Place pint container in the Ninja Creami outer bowl, secure lid and place in machine. Run lite ice cream mode x1.
  • Run re-spin mode x1.  Respin an additional time if needed.
