Creamy Feta Chicken Bake with Spinach

This feta chicken bake is the perfect combination of tender chicken, creamy feta sauce and bursts of tomato, fresh herbs and spinach. It’s super flavorful and simple enough for an easy weeknight meal.

My favorite part of this baked feta chicken is how easy it is. It’s perfect for busy weeknights or any time that you don’t feel like cooking because of how low prep it is- all you have to do is put the ingredients in a baking dish and throw it in the oven.

It’s incredibly flavorful from fresh ingredients like tangy feta cheese, spinach and tomatoes and you can serve it up multiple ways. You can serve it alongside some toasted garlic bread, over rice, or toss the chicken and extra sauce with some noodles for a full meal.

This chicken feta bake is also a great high protein option with 35 grams of protein per serving.

It’s delicious, easy, and reheats great so it’s perfect for leftovers too.

Ingredients

  • Boneless skinless chicken breasts: You’ll need thin chicken breasts or chicken cutlets- this helps the chicken bake quickly. You can buy pre-sliced chicken or slice them yourself. You can also use boneless skinless chicken thighs if you slice them thin too.
  • Block of feta cheese: For this feta chicken bake you’ll use a whole, 8 oz block of full fat feta cheese. It has the perfect salty flavor and melts down to make a creamy sauce as it bakes. 
  • Sweet onion: Sweet onion adds even more flavor, but you can use red onion or yellow onion too.
  • Cherry tomatoes: Juicy tomatoes bring flavor and liquid into the bake helping to form the creamy feta tomato sauce. Grape tomatoes or cherry tomatoes are both great options.
  • Garlic: Fresh garlic is another perfect compliment to the bold flavors of this dish. You can use jarred minced garlic if that is what you have on hand but I always recommend fresh.
  • Sun dried tomatoes + oil: Sun dried tomatoes add a sweet, tangy flavor that makes everything taste like it cooked for hours. A little olive oil from the jar of tomatoes also adds flavor and helps chicken bake to perfect golden brown.
  • Seasonings: You’ll need garlic powder, onion powder, paprika, salt + black pepper.
  • Chicken broth: A little bit of chicken broth helps soften the vegetables, create a sauce and makes juicy chicken.
  • Baby spinach: Roughly chopped fresh baby spinach adds color and nutrients to this dish.
  • Fresh basil: Freshly chopped basil adds the perfect fresh herby flavor to finish this off.

How to make feta chicken bake

Step 1: Preheat oven to 375 degrees F. In a large baking dish add onions, garlic, sun-dried tomatoes, and broth. Place chicken in the dish with feta in the middle. Top chicken sun-dried tomato oil and seasonings.

Step 2: Next, evenly distribute the cherry tomatoes around the dish.

Step 3: Bake for 15 minutes. Remove from oven to break up feta and gently squish some tomatoes using a wooden spoon or fork (very carefully, it will be hot and tomatoes can squirt hot liquid out). Return to oven and bake an additional 10 minutes.

Step 4: Remove from oven and mash feta and tomatoes with a fork to form a smooth sauce. Stir in spinach and return to oven for 5-10 minutes. The thickest part of the chicken should be cooked to a minimum internatl temperature of 165 degrees.

Step 5: Top with basil and serve over starch of choice- rice, pasta, or roasted potatoes.

How to store

Store leftovers in an airtight container in the fridge for up to 4 days.

Variations

  • For easy chicken feta pasta, remove the chicken from the baking dish, chop and return to the sauce with 2 cups of cooked pasta (cook while the chicken bakes). Mix together and you have an easy flavorful pasta dish.
  • Not a feta fan? Use cream cheese, Boursin cheese or goat cheese instead.
  • Swap chicken for chicken sausage- simply remove them from the casserole dish, slice and return them to the sauce before serving.
  • Add in extra vegetables! Roasted bell pepper, brussels sprout halves or sliced mushrooms would also work great in this dish.
  • Add a squeeze of lemon juice if you want a burst of bright flavor.

Ingredients 

  • 1 lb boneless skinless chicken breasts, thinly sliced or cutlets
  • 1/2 sweet onion, sliced thin
  • 5 cloves garlic, minced
  • 1/3 cup chicken broth
  • 8 oz feta cheese block
  • 2 cups cherry tomatoes, or grape tomatoes
  • 2 tbsp sundried tomatoes + 2 tsp oil from jar, thinly sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups baby spinach, roughly chopped
  • 1/2 cup basil, thinly sliced

Instructions 

  • Preheat oven to 375 degrees F.
  • In a large baking dish, add onions, garlic and sundried tomatoes and broth.
  • Arrange chicken along the edges of the baking dish and feta in the middle. Top the chicken breasts with oil from sundried tomatoes and seasonings (garlic and onion powder, paprika, salt + pepper). Evenly distribute cherry tomatoes around the dish.
  • Bake for 20 minutes. Remove from oven to break up feta cheese with a spatula and gently burst some tomatoes using a wooden spoon or fork (be careful- when tomatoes burst they can shoot out hot liquid) . Return to oven and bake an additional 10 minutes.
  • Remove from oven and mash feta and tomatoes with a fork to form a smooth sauce. Stir in spinach and return to oven for 5 minutes. The thickest part of the chicken should be cooked to a minimum internatl temperature of 165 degrees.
  • Top with basil and serve over pasta, rice, or roasted potatoes. Optional: top with extra feta or parmesan cheese.

    Loved this dish! Such an easy one to prep and get in the oven quickly and let it do all the work in there for you. My boys rated it a 9/10 and 10/10! I didnโ€™t have sun-dried tomatoes, so I subbed roasted red pepper/artichoke tapenade I had in the fridge and it worked great!
