Why you’ll love this

These easy chicken bites are healthy, flavorful, easy, and fast. I can’t ask for much more in a dinner recipe!

The best part is that it’s so quick and low effort. I love this recipe for an easy weeknight meal when I need something fast that I know everyone is going to love. Because the chicken is sliced into smaller pieces, it cooks up in no time.

While the chicken is cooking you can throw some microwave rice in the microwave, air fry your favorite vegetables, or even throw it on top of a salad.

It’s also great for meal prep because you can make a big batch and then store in the fridge for a variety of dishes throughout the week.

If you love a foolproof recipe that’s delicious every time, you have to give this one a try.

Let’s get into what you need to make it.

Ingredients

  1. Skinless chicken breasts, cubed: First you’ll need cubed chicken breast that’s sliced into bite-sized chunks. This is probably the most annoying part of the recipe- slicing your chicken into small chicken pieces. You can also buy diced chicken if you can find it. You can use chicken thigh meat too.
  2. Honey: Just a little bit of honey adds the perfect amount of sweetness and “stickiness” to the sauce.
  3. Soy sauce: Soy sauce adds tons of salty flavor to this sauce, but you can use coconut aminos too.
  4. Avocado oil: You can use any cooking oil that you have, but I like to use avocado oil for its higher smoke point. This one is my favorite and I love grabbing the big size! You can use olive oil, but it does have a lower smoke point.
  5. Minced garlic: I recommend using fresh garlic cloves but you can also sub in some garlic powder if you don’t have any.
  6. Apple cider vinegar: Apple cider vinegar adds just the perfect amount of acidity to the sauce. You can sub in just about any other vinegar if you don’t have apple cider on hand, but it will change the flavor just a little. You could also use a squeeze of lemon or lime juice!
  7. Salt + pepper

Step-by-step instructions

  1. In a small bowl, make your “marinade”. Combine oil, garlic, honey, soy sauce, apple cider vinegar, salt and pepper. Whisk well until combined.

  1. Cook chicken cubes with sauce on medium heat until marinade is reduced and chicken is cooked through, usually about 15 minutes. Chicken will be golden brown and will have a “sticky” sauce coating when finished. Make sure to move chicken around regularly to prevent burning, and reduce heat to low at any point if needed to prevent burning.

I liked this recipe! It tasted like stir-fry chicken. Next time, I think I’ll double the amount of honey so it’s sweeter and stickier. But I’ll be making this again with sticky rice and broccoli!

I did not add honey but ketcap manis as a combination of soya sauce and mirin bc I feel deeply uncomfortable cooking honey. Next time I will add honey when it’s fully cooked and ready to serve or I’ll add some brown sugar. Thanks for the recipe, it was easy & delicious.
