The Best Buffalo Chicken Tater Tot Casserole

This buffalo chicken tater tot casserole is basically buffalo chicken dip topped with crispy tater tots and melted cheese. Not only is it delicious but it’s also high protein and has some veggies snuck in too! This is sure to be a new family favorite for busy weeknights.

The creamy buffalo chicken base is made from Greek yogurt, so it’s made a little lighter. It’s mixed with ingredients like zesty buffalo sauce and ranch seasoning and then topped with cheese and tater tots for a truly amazing flavor experience.

It’s also high protein with each serving offering about 33 grams of protein!

Plus there’s some veggies snuck in, but you’ll barely notice. Cauliflower is the perfect addition to this buffalo chicken casserole and I recommend using frozen to make your life that much easier.

This easy recipe is a major crowd pleaser and also reheats super well! Your whole family will love this one.

Ingredients

  • Shredded chicken: You’ll need some cooked chicken to start with. You can use rotisserie chicken, bake a couple of large chicken breasts, or make Air Fryer Shredded Chicken! This recipe is also a great way to use up leftover chicken breast.
  • Cauliflower: Use frozen cauliflower to make this recipe super simple. You could also chop fresh cauliflower and quickly pan cook it.
  • Tater tots: The best part- delicious tater tots! Grab your favorite frozen tater tots. My favorite brand is Alexia tater tots, but you can use whatever you like.
  • Buffalo hot sauce: My favorite buffalo sauce to use is Primal Kitchen or Frank’s Buffalo Wing Sauce. If you like an extra spicy buffalo sauce, I recommend using Frank’s Hot Buffalo, or add extra buffalo sauce.
  • Ranch seasoning mix: For a little bit of that creamy ranch flavor, you’ll need dry ranch seasoning powder. I usually go with Hidden Valley but you can use any brand that you prefer.
  • Greek yogurt: Instead of something like cream of chicken soup, Greek yogurt is a great lighter and high protein base that still makes everything nice and creamy.
  • Cream cheese: You’ll also need a little bit of cream cheese!
  • Shredded cheese: I like to use a combination of sharp cheddar cheese and Mexican blend cheese but you can choose one or the other to make your life a little simpler!

How to make buffalo chicken tater tot casserole

  1. Preheat oven to 450 degrees F.

  1. In a large bowl whisk together cream cheese, Greek yogurt, buffalo sauce and ranch powder.

  1. Add cooked cauliflower, shredded chicken and cheddar cheese to the cream cheese and Greek yogurt mixture. Mix to combine.

  1. Spread chicken mixture in an even layer in a large 8×8 or 9×9 casserole dish. Top with frozen tater tots, covering the filling entirely in a single layer. Bake in preheated oven for 30 minutes until tater tots are golden brown.

  1. Remove from the oven and sprinkle evenly with shredded Mexican blend cheese. Return casserole to the oven and bake for 3-5 minutes until the cheese is melted.

  1. Top with green onions or fresh herbs and a drizzle of ranch dressing or a dollop of Greek yogurt or sour cream! Add black pepper if desired to taste.

How to store

Store leftovers in an airtight container in the fridge for up to 4 days.

Variations

  • Use store-bought rotisserie chicken for an even easier meal.
  • No shredded chicken on hand? Use ground chicken or ground turkey instead!
  • Drizzle with ranch or blue cheese dressing, or serve with a dollop of sour cream or plain Greek yogurt. Or drizzle with Buffalo Ranch Sauce!
  • Add blue cheese crumbles to the top of the casserole before the final bake.
  • Instead of cauliflower, try broccoli or any other frozen veggies that you like.
  • Instead of tater tots, top with mashed potatoes or mashed sweet potatoes before baking for a buffalo chicken Shepherd’s pie! You can also top with roasted sweet potatoes or regular potatoes.

    This was SO good! I did 1/4 cup of hot sauce and cooked at 425ยฐ instead of 450ยฐ and it was perfect. I baked chicken and shredded it and it was still super easy even while entertaining my 7 month old. Definitely adding this to the rotation!

    This is so yummy! I added a side of broccoli and my kids and husband ate it up. We drizzled extra Buffalo sauce and a little ranch on top. My oldest ate hers with some jalapeรฑo chips too. ๐Ÿ˜„

    Perfect recipe! This is so good and simple to prepare. I made the chicken in the crockpot. I was worried this would be too spicy but it is just right. I served this with celery.

    This recipe is FANTASTIC! I made it for the first time today, but I switched cauliflower for onions, added cottage cheese, and used sweet potato tater tots instead. Served it with broccoli and guac. It was phenomenal – probably the best thing Iโ€™ve ever made. This is absolutely going on my list of dinner โ€œregularsโ€!!

    Our kids donโ€™t like spicy foods, so we tried it with barbecue instead of buffalo sauceโ€ฆ It was absolutely delicious and we will be using it again!

    1. Genius, I’ll definitely have to try barbecue sauce! I find that Frank’s buffalo sauce is very mild and the end product isn’t super spicy at all! You could also reduce the buffalo sauce even more and it would still be delicious ๐Ÿ™‚

    This was so easy and absolutely delicious. My husband “hates” cauliflower, and ate two helpings of this for dinner last night. He also suggested it would be a great dish to bring to a Super Bowl party, since it has that buffalo chicken dip feel.

    Loved this one! Made the recipe as is for my husband and then made some for myself using shredded tofu instead of chicken! It turned out great! I used Big Mountains soy-free tofu but I’m sure any extra firm tofu would work. My husband said it’s one of the best dinners we’ve had in a while! Leftovers were great too!
