Blended chia pudding ingredients
- Chia Seeds: Chia seeds are a nutrition powerhouse packed with fiber, healthy omega-3 fatty acids and antioxidants. The soluble fiber in chia seeds is what forms the gel that gives this recipe itโs pudding texture and heart health benefits! I used whole chia seeds for this recipe, but you could also use ground chia seeds.
- Milk: Milk helps to get the pudding nice and creamy. If you donโt like dairy milk, you can substitute any milk of choice like oat milk, coconut milk, soy milk, or even hemp milk. Both dairy and non-dairy milk work great. If you like a thinner pudding, increase the milk to ยฝ cup.
- Honey: You can use honey, maple syrup (regular or sugar free), or any sweetener you like for this recipe. It wouldnโt be pudding without a little something sweet!
- Cocoa powder: Unsweetened cocoa powder gives this recipe a rich chocolatey flavor and a little boost of antioxidants! Chocolate also helps to off-set any strong flavor blended chia seeds sometimes have on their own.
- Vanilla extract: A little bit of vanilla extract enhances the flavor of the chocolate and brings out the sweetness (this one is my favorite).
How to make blended chia pudding
- Add all ingredients to a food processor or high-speed blender (I prefer a food processor, but either will work. Blend until completely smooth, scraping the sides down periodically.
- Transfer to a container and allow to set in the fridge for at least 30 minutes before serving. The pudding will get thicker as it continues to set.
- Serve with your favorite toppings like whipped cream, fresh fruit or shaved chocolate.
How to store
Store leftovers in an airtight container in the fridge for up to 4 days.
Variations
- Top with a big scoop of Greek yogurt and berries for a balanced breakfast chia pudding!
- For an even higher protein chia pudding, add a cup of Greek yogurt or extra milk plus a scoop of protein powder.
- Chocolate peanut butter chia pudding: increase the milk to ยฝ cup, add 1 tbsp powdered peanut butter. Top with chocolate chips and a drizzle of peanut butter or almond butter.
- Tropical flavor chia pudding: Use coconut milk and skip the cocoa powder. Top with shaved coconut, crushed pineapple and banana slices.
- Chocolate cherry: Add ยผ tsp almond extract and blend in 5-6 pitted dark fresh or frozen cherries. Top with more sliced cherries and a few chocolate chips.
- Swap out the sweetener for a few pitted medjool dates, this adds extra fiber and natural sweetness!
