The swirl of blueberry jam creates blueberry flavor throughout the entire jar, while fresh blueberries add little bursts of sweetness and texture. As the oats chill overnight, they absorb some of the blueberry jam, creating blueberry flavor throughout.
Combined with bright lemon zest and lemon juice, the result is a breakfast that’s light, creamy, and easy to look forward to all week.

- Old-fashioned oats: The old-fashioned oats create the best texture for overnight oats. I don’t recommend quick oats since they become too soft after sitting overnight.
- Greek yogurt: Makes the oats extra creamy while adding protein to help keep you full. Plain or vanilla Greek yogurt both work well.
- Lemon zest: Don’t skip the lemon zest. It provides most of the bright lemon flavor and gives the oats a fresher taste than lemon juice alone.
- Lemon juice: A small amount of fresh lemon juice balances the sweetness and enhances the blueberry flavor without making the oats too tart.
- Blueberry jam: This is my favorite ingredient in the recipe. Swirling the jam into the oats creates blueberry flavor throughout the jar instead of relying only on fresh berries. Homemade or store-bought both work well.
- Fresh blueberries: Fresh blueberries add juicy bursts of sweetness that pair perfectly with the creamy oats and blueberry jam. Fresh blueberries work best for texture, but frozen blueberries can be used if thawed first.
- Chia seeds: Chia seeds help thicken the oats overnight while adding a little extra fiber and staying power.
My Favorite Ways to Customize Them
- Extra lemon: Add more zest for a brighter citrus flavor.
- Crunchy topping: Top with granola or sliced almonds just before serving.
- Lemon cheesecake: Add a dollop of whipped cottage cheese or extra Greek yogurt.
- Higher protein: Stir in vanilla protein powder and a splash of extra milk, if needed.
How to Make Lemon Blueberry Overnight Oats

- In a small bowl or mason jar, mix together the oats, Greek yogurt, milk, chia seeds, vanilla, lemon zest, lemon juice, and maple syrup.

- Swirl the blueberry jam in last. Refrigerate for at least 4 hours or overnight, then serve with fresh berries and more jam, if desired.

A Few Things That Make a Big Difference
- Swirl the jam in instead of stirring it completely. You’ll get little pockets of blueberry flavor throughout the oats.
- Let the oats chill long enough. Overnight oats tastes the best after several hours in the fridge. Four hours is minimum, but overnight gives them the creamiest texture.
- Wait to add crunchy toppings. Granola or nuts stay crisp if you add them just before serving.
- Adjust the consistency in the morning. If the oats are thicker than you like, stir in a splash of milk before serving.
Storage and Meal Prep
These lemon blueberry overnight oats taste just as good on day three as they do on day one.
Store the oats in an airtight container or mason jar in the refrigerator for up to 4 days. If the oats thicken more than you’d like, simply stir in a splash of milk before serving until they reach your preferred consistency.
If you’re adding crunchy toppings like granola or sliced almonds, wait until just before serving so they stay crisp.
Meal Prep Tip
I usually make three or four jars at the beginning of the week so breakfast is ready to grab each morning. Right before serving, I’ll add a few extra blueberries, another spoonful of blueberry jam, and a little more lemon zest. It makes them taste freshly made.

High-Protein Lemon Blueberry Overnight Oats
Ingredients
- 1/2 cup old fashioned oats
- 1/2 cup Greek yogurt
- 1/2 cup milk
- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 2-3 teaspoons lemon juice, adjust to taste
- 1/2-1 tablespoon maple syrup
- 2 tablespoon blueberry jam, homemade instructions below or store-bought
- 1/2 cup fresh blueberries, for topping
Quick homemade jam
- 1/2 cup fresh blueberries
- 1 teaspoon maple syrup
- 1/2 tablespoon lemon juice
- 1/2 teaspoon lemon zest
Instructions
- In a small bowl or mason jar, mix together oats, Greek yogurt, milk, chia seeds, vanilla, lemon zest, lemon juice and maple syrup. Swirl jam in last.
- If making homemade jam: Add the fruit, syrup, lemon juice and zest to a small saucepan. Heat oven medium low for 8 to 10 minutes stirring constantly. Continue cooking until thick and jammy. Set aside to cool.
- Refrigerate for at least 4 hours or overnight.
- Serve with fresh berries and more jam if desired.
