These Lemon Blueberry Overnight Oats are creamy, bright, and packed with blueberry flavor in every bite. Made with Greek yogurt, fresh blueberries, and a swirl of blueberry jam, they're a high-protein breakfast that's perfect for meal prep.

Quick homemade jam
1/2cupfresh blueberries
1teaspoonmaple syrup
1/2tablespoonlemon juice
1/2teaspoonlemon zest
Instructions
In a small bowl or mason jar, mix together oats, Greek yogurt, milk, chia seeds, vanilla, lemon zest, lemon juice and maple syrup. Swirl jam in last.
If making homemade jam: Add the fruit, syrup, lemon juice and zest to a small saucepan. Heat oven medium low for 8 to 10 minutes stirring constantly. Continue cooking until thick and jammy. Set aside to cool.
Refrigerate for at least 4 hours or overnight.
Serve with fresh berries and more jam if desired.
Notes
Don't skip the lemon zest. It provides most of the fresh flavor.
Adjust the consistency. If oats are thicker after chilling, stir in a splash of milk before serving.
Storage: Store in the refrigerator for up to 4 days.
