Easy Protein Rice Krispie Treats

These protein Rice Krispie treats have everything you love about classic Rice Krispie treats but with 10 grams of protein per square! They’re perfectly chewy with gooey marshmallows and plenty of buttery flavor. Your whole family will love these!

Rice Krispie treats are one of my all-time favorite treats for so many reasons- they’re delicious, a nostalgic childhood classic and they’re a no bake treat that’s so easy to make.

If you’re looking to up your protein intake or you’re just looking for treats with a little protein boost to leave you satisfied, don’t miss these. This protein Rice Krispies recipe packs 10 grams of protein per square! Enjoy this for dessert or even as a great post or pre-workout snack.

The best part is that you only need a handful of simple ingredients. These come together in less than 10 minutes with just 5 main ingredients and then they’re topped with a white chocolate drizzle and rainbow sprinkles.

Ingredients

  • Crispy rice cereal: You’ll need classic Rice Krispies of course as the base of these squares- or any other crispy rice cereal. Brown rice cereal will work too.
  • Mini marshmallows: You can use mini marshmallows or regular marshmallows. I like the mini size because they melt quicker and more even.
  • Vanilla protein powder: Vanilla protein powder gives these treats a major protein boost and you can barely tell it’s in there! My favorites to use are Optimum Nutrition or Clean Simple Eats, but use whatever your favorite protein powder is. Plant-based works too.
  • Butter: Melted butter adds that delicious classic Rice Krispie treat flavor. You could also use melted coconut oil if you prefer.
  • Vanilla extract: Vanilla adds the perfect amount of extra vanilla flavor. This one is my favorite.
  • White chocolate chips: White chocolate is technically optional, but I love drizzling a little bit to help the sprinkles stick and add the perfect amount of extra sweetness.
  • Rainbow sprinkles: Everything is better with sprinkles! I love Supernatural sprinkles– they’re allergy friendly and dye-free if you prefer that. I like Watkins sprinkles too!

How to make protein Rice Krispie treats

Step 1: First, prepare a square baking dish or 8×8″ or 9×9” pan with parchment paper or a light coating of butter or nonstick cooking spray. In a large saucepan, melt butter over low-medium heat.

Step 2: Add marshmallows to the sauce pan and stir with a silicone or wooden spoon until about halfway melted.

Step 3: When marshmallows are about halfway melted, add vanilla extract.

Step 4: Continue stirring regularly until marshmallows, butter, and vanilla are completely melted and smooth. Remove from heat.

Step 5: Add crispy rice cereal and protein powder to the melted marshmallow mixture.

Step 6: Continue mixing the cereal mixture until completely combined. If you can see any dry protein powder, keep mixing!

Step 7: Press mixture very gently into the prepared pan. Be careful not to press down too hard or your squares will be too dense.

Step 8: In a small microwave-safe bowl, microwave white chocolate in 15-30 second increments until melted and smooth. Drizzle over the top of the rice krispie treats and top with sprinkles. Allow to cool for 20-30 minutes before slicing into 9 even squares with a sharp knife.

How to store

Store leftover treats in an airtight container at room temperature for up to a week.

Variations

  • Add 1/2 cup of creamy peanut butter for a peanut butter version with even more protein. Drizzle with melted chocolate. You could also a different nut butter like cashew butter or almond butter.
  • Use chocolate whey protein powder instead of vanilla and stir in mini chocolate chips for a chocolate version. Or, add 1-2 tbsp of cocoa powder to your mixture.
  • Make a fruity version instead- use fruity pebbles or something similar and stir in freeze-dried strawberries.
  • Use vegan marshmallows, a plant-based protein powder, vegan butter and dairy-free chocolate chips to keep these dairy free and vegan.

Protein Rice Krispie Treats

Ingredients 

  • 4 tbsp butter
  • 10 oz mini marshmallows
  • 1 tsp vanilla extract
  • 4 cups Rice Krispies, or any crispy rice cereal
  • 1 cup vanilla protein powder
  • 1/3 cup white chocolate chips
  • sprinkles, for topping

Instructions 

  • Prepare a 9×9” pan with parchment paper or a light coating of butter or oil.
  • Melt butter in a large saucepan over low-medium heat.
  • Add marshmallows to the pan and stir regularly with a silicone or wooden spoon. When marshmallows are about halfway melted, add vanilla extract. Continue stirring regularly until marshmallows are completely melted and smooth and butter, marshmallows and vanilla are completely combined. Remove from heat.
  • Stir in crispy rice cereal and protein powder until completely combined. If you can see any dry protein powder, keep mixing!
  • Press mixture very gently into the prepared pan. Be careful not to press down too hard or your squares will be too dense.
  • In a small microwave-safe bowl, microwave white chocolate in 15-30 second increments until melted and smooth. Drizzle over the top of the rice krispie treats and then top with sprinkles.
  • Allow to cool for 20-30 minutes before slicing into 9 even squares.
