How to Make Chicken Caesar Smashed Tacos

One of the best things about these chicken caesar tacos is how quickly they come together. Once the chicken is smashed into the tortillas, the rest of the recipe moves fast.

  1. Smash the chicken onto the tortillas: On a large plate or baking sheet, lay out your tortillas in a single layer. Add one ground chicken ball to each tortilla, pressing into a thin even layer all the way to the edge of the tortilla. Sprinkle each tortilla with a generous pinch of onion powder, garlic powder, paprika, salt, and pepper.

  1. Cook until crispy: Heat oil in a large skillet over medium heat. Working in batches, place tortillas in the pan chicken side down.

  • Keep the heat around medium. If the heat is too high, the tortillas can brown too quickly before the chicken fully cooks through.
  • Chop the romaine small. Smaller pieces make the tacos easier to eat.
  • Add the salad and croutons right before serving. The smashed chicken tacos stay crisper when the Caesar salad is added just before eating.

How to Store and Reheat

These smash tacos are best enjoyed fresh, but if you plan to have leftovers, be sure to store the tortillas and salad separately. I also recommend leaving the croutons off until just before serving.

Keep the dressed Caesar salad in an airtight container in the refrigerator for up to 1-2 days. I recommend enjoying as soon as possible since romaine lettuce will begin to wilt.

Store the cooked smashed chicken tortillas in a separate airtight container in the fridge for up to 3 days.

Reheat the chicken tacos in a skillet or air fryer for a few minutes until warmed through and crispy again. You can also microwave them but the tortilla will be a bit softer.

Assemble the tacos just before serving so the tortillas stay crispy and the Caesar topping stays fresh and crunchy.

Ingredients 

Taco ingredients:

  • 8 taco-sized flour tortillas
  • 1 pound ground chicken, divided into 8 balls
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon neutral oil, (like avocado oil)

Dressing:

  • 2/3 cup plain Greek yogurt
  • 3 tablespoons parmesan cheese
  • 2 tablespoon mayonnaise
  • 2-3 teaspoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, microplaned or very finely minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2-4 tablespoons milk, add to desired consistency

Salad:

  • 1 head romaine lettuce, washed, dried and chopped small (about 4 cups)
  • 1/3-1/2 cup parmesan cheese, shaved (plus more for serving)
  • 1/2 cup garlic croutons, lightly crushed (plus more for serving)
  • Lemon wedges, for serving

Instructions 

  • On a large plate or baking sheet, lay out your flour tortillas in a single layer. Add one ground chicken ball to each tortilla, pressing into a thin even layer all the way to the edge of the tortilla.
