High Protein S’mores Overnight Oats

These s’mores overnight oats have a creamy chocolate base with marshmallow cream and graham crackers for that classic s’mores flavor in every bite. With 30 grams of protein, they’re easy to prep ahead for a breakfast that feels a little more fun.

As soon as the days start getting cooler, I start craving a s’more toasted over a campfire. These overnight oats were inspired by that same cozy treat, but in a form I can enjoy for breakfast on an ordinary weekday.

Getting That Classic S’mores Flavor

When I first thought about turning s’mores into overnight oats, chocolate and marshmallow were the obvious flavors. But without graham crackers, they still tasted like chocolate marshmallow oats. That slightly sweet, toasted graham flavor is what ties everything together.

I mix marshmallow cream into the chocolate oats so you get marshmallow flavor throughout, but I wait until serving to add the graham crackers. If they sit in the oats overnight, they lose their crunch and become too soft. Adding them in the morning gives you the graham cracker flavor without losing that contrast in texture.

Here’s what else you’ll love about them:

  • High in protein and fiber. Greek yogurt, protein powder, oats, and chia seeds make this a filling breakfast.
  • Chocolate flavor in every bite. Chocolate protein powder creates a rich chocolate base while adding extra protein.
  • Creamy + crunchy. The oats are thick and creamy, while the graham crackers and chocolate pieces add a little crunch.
  • Made for meal prep. Prep several jars at the beginning of the week, then add the toppings in the morning for an easy grab-and-go breakfast.

Ingredient Notes

A few ingredients do most of the work here, so here’s what I recommend for the best flavor and texture.

  • Old fashioned oats: I recommend old-fashioned rolled oats because they soften overnight without becoming too mushy. Quick oats will be much softer, while steel-cut oats stay too firm for this recipe.
  • Milk: I like dairy milk best because it makes the oats creamy and adds a little more protein. Any milk will work, though, including almond, oat, soy, or coconut milk. Keep in mind that the milk you choose may slightly change the flavor and thickness.
  • Greek yogurt: Plain Greek yogurt makes the oats extra creamy and adds protein. Nonfat, 2%, and whole milk Greek yogurt all work, so use whichever one you normally buy.
  • Chia seeds: They do more than add fiber. They soak up some of the liquid and keep your overnight oats from turning out watery.
  • Chocolate protein powder: This gives the oat base its chocolate flavor while adding extra protein. Use one you already love because you’ll definitely taste it here. I like this chocolate brownie protein powder for a richer, brownie-like flavor. 
  • Marshmallow creme: This mixes into the oats much better than mini marshmallows and adds marshmallow flavor throughout the jar. It doesn’t have to blend in perfectly. A few gooey swirls are a good thing here!
  • Graham cracker: Regular honey graham crackers give you the most classic s’mores flavor, but gluten-free graham crackers work too.
  • Toppings: You can keep them simple or really lean into the s’mores theme. See my favorite combinations below.

How to Make S’mores Overnight Oats

The fridge does most of the work here, but mixing everything thoroughly gives you the best texture by morning.

  1. Mix the oats: Add the oats, milk, Greek yogurt, chia seeds, chocolate protein powder, and vanilla to a 12- to 16-ounce jar. Stir until well combined, then mix in the marshmallow cream. It’s fine if a few gooey swirls remain.

  1. Refrigerate and add toppings: Cover and refrigerate for at least 4 hours or overnight. When you’re ready to eat your s’mores overnight oats, top them with more marshmallow creme, crushed graham crackers, and any other toppings you like.

My Best Tips For Creamy Overnight Oats

Overnight oats are pretty hard to mess up, but a few small details will give you a much better texture by morning.

  • Scrape the bottom and the sides of the jar. Chocolate protein powder and chia seeds like to hide in the corners, so give everything one final stir before refrigerating.
  • Leave room for the toppings. Use at least a 12-ounce jar so you have plenty of space for marshmallow creme, graham crackers, chocolate, and anything else you want to add. I love these 16 oz mason jars with lids.
  • Let them sit overnight when possible. They’re ready after about 4 hours, but I think the oats have their best texture after a full night in the fridge.
  • Check the consistency before eating. Protein powders absorb liquid differently, so your oats may be thicker than mine in the morning. Stir in a splash of milk until they’re as creamy as you like.
  • Eat them warm or cold. I prefer these cold, especially with the Greek yogurt and marshmallow cream, but you can warm the oat base in the microwave if you prefer warm overnight oats. Add the s’mores toppings after heating.

Don’t Skip the Toppings

The toppings aren’t just for looks here. Adding graham crackers right before eating keeps them crunchy and gives the oats that unmistakable s’mores flavor.

My favorite combination, and what you see in the photos, is graham cracker crumbs, mini marshmallows, a toasted marshmallow, and a square of Hershey’s chocolate.

Here are a few more ways to top your oats:

  • Extra graham crunch: Use a mix of fine graham cracker crumbs and larger broken pieces for more texture.
  • More marshmallow: Add a spoonful of marshmallow cream, mini marshmallows, or a full-sized toasted marshmallow.
  • Extra chocolate: Sprinkle on mini chocolate chips, add a square of chocolate, or finish with chocolate syrup.
  • Chocolate hazelnut: Warm a little Nutella so it’s easy to drizzle over the top.

Storage and Meal Prep

Store s’mores overnight oats in an airtight container or covered jar in the refrigerator for up to 4 days.

For meal prep, mix several jars of the chocolate oat base at once and store the toppings separately. Add them just before eating so they keep their texture.

Ingredients

  • 1/2 scoop chocolate protein powder
