Slow Cooker Chicken Fajitas have everything you love about classic fajitas, with juicy shredded chicken and crisp-tender peppers and onions in every bite. With less than 10 minutes of hands-on prep, they’re perfect for busy weekdays when you need dinner to be as effortless as possible.

Chicken fajitas are always a hit with my family, but cooking everything in batches on the stove isn’t ideal when everyone is hungry and I’m trying to get dinner on the table. I wanted a version I could start earlier in the day and leave mostly hands-off until shortly before dinner.
I make these when I know my evening will be hectic but I have a few minutes earlier in the day to get the chicken started. Once the chicken is cooking, I can get on with the rest of my day and come back shortly before dinner to finish the filling. That last step is what makes this slow cooker version work so well.
Easy Slow Cooker Chicken Fajitas
I love slow cooker recipes but they often leave me disappointed with the final result. This one is packed with flavor and just as good as stovetop fajitas. I like to cook the chicken first, then add the peppers and onions for the final 20–30 minutes so they soak up the fajita flavors while still keeping some bite. That small timing change gives you better texture without adding much extra work.
There are a few other shortcuts that make this version especially easy:
- Protein and veggie packed. There’s plenty of protein and nutrient rich veggies to make this a truly balanced and satisfying meal.
- Only six main ingredients. Jarred salsa and packaged taco seasoning do most of the work, so you don’t need to measure a long list of spices or make a separate marinade.
- Perfect for busy weeknights. The chicken goes straight into the slow cooker with the salsa and seasoning and cooks until it’s tender enough to shred, saving you precious time.
- Easy to use beyond fajitas. Leftovers work especially well in taco rice bowls, quesadillas, salads, or easy lunches later in the week.
Ingredient Notes
You only need six main ingredients for these crock pot chicken fajitas. Here’s what I use and a few easy swaps that work:

- Chicken breast: Boneless, skinless chicken breasts become easy to shred after several hours in the slow cooker. You can use boneless, skinless chicken thighs if you prefer darker meat. They’ll give you slightly richer filling and may release a little more liquid as they cook.
- Jarred salsa: Since the salsa provides most of the cooking liquid and flavor, use one you already know you like. Mild, medium, or hot all work, so choose based on how spicy you want the chicken.
- Taco seasoning: One packet keeps the recipe quick and cuts down on measuring. Siete is hands down my favorite. You can also use about 3 tablespoons of your favorite homemade or prepared taco seasoning.
- Lime: I use freshly squeezed lime juice to brighten up the salsa and seasoning, but bottled lime juice works if that’s more convenient. Half a fresh lime should give you the tablespoon you need.
- Bell peppers: Any colors will work, so feel free to use your favorites. Red, orange, and yellow peppers are sweeter, while green peppers have that more classic savory fajita flavor.
- Onion: I went with a yellow onion because it becomes mild and slightly sweet as it cooks. A white or red onion will also work.
How to Make Chicken Fajitas in the Slow Cooker
Most of the work for these slow cooker chicken fajitas happens without you. The recipe card below has all the details, but here’s a quick look at how they’re made:

- Assemble: Add the chicken breasts, salsa, taco seasoning, and lime juice to a 6-quart slow cooker. Gently stir to coat the chicken.

- Cook and shred the chicken. Cover and cook on high for 2½ to 3 hours or on low for 5 to 6 hours. Remove the chicken, shred it with two forks, and return it to the slow cooker.

- Add the vegetables. Stir in the sliced bell peppers and onion. Cover and cook for another 20 to 30 minutes, until the vegetables are softened to your liking but still have some bite.

- Assemble your fajitas. Let any extra liquid drip off the filling before adding it to warm tortillas. Add your favorite toppings and serve these easy slow cooker chicken fajitas right away.

Tips for the Best Crock Pot Chicken Fajitas
A few small details will help you get juicy chicken and vegetables with the right texture:
- Choose a salsa that you enjoy! Since jarred salsa is a main ingredient, make sure to choose one that you enjoy eating, since the flavor will definitely come through.
- Check the chicken at the earliest cooking time. I recommend using an instant-read meat thermometer to check it without any guesswork. Slow cookers can vary quite a bit, and chicken breasts can dry out when cooked too long. Start checking around 2½ hours on high or 5 hours on low. The chicken should reach 165°F and pull apart easily.
- Cut the vegetables into thick, even strips. Slice the peppers and onion into strips about ½ inch wide. Thinner pieces soften much faster, while thicker, evenly sized strips are more likely to stay crisp-tender.
- Add the peppers last. For veggies that still have a little bite, I recommend adding them after the chicken has cooked. I’ve done it both ways, and I recommend only adding the veggies at the same time if you’re cooking on high for a few hours.
- Don’t leave the vegetables on warm for too long. Once the peppers and onions are cooked to your liking, serve the chicken fajitas or turn off the slow cooker. They’ll continue softening as they sit in the hot filling.
What to Serve with Shredded Chicken Fajitas
These chicken fajitas are easy to turn into a full family dinner with a few toppings and simple sides. Here are some of my favorite ways to serve them:
- Toppings: This is the fun part! I like to set out shredded cheese, cilantro, avocado, sour cream or plain Greek yogurt, jalapeños, and lime wedges, then let everyone load up their fajitas with whatever they like.
- Rice and beans: Keep it simple with white, brown, or cilantro lime rice and black or refried beans on the side. Or pile the rice, beans, fajita filling, avocado, salsa, cilantro, and Greek yogurt into a bowl, just like I do with my taco bowls.
- Chips and dips: You can’t go wrong with a bowl of tortilla chips and something good to scoop up. Try my guacamole recipe or black bean corn feta dip for an easy side everyone can snack on while they build their fajitas.
Storage and Meal Prep
I love making a big batch of these shredded chicken fajitas because the leftovers are easy to turn into another dinner or pack for lunch.
- Meal prep: I like to portion the shredded chicken, peppers, and onions with rice and beans for easy fajita bowls. Keep avocado, Greek yogurt, cilantro, and other cold toppings separate, then add them after reheating. You can also slice the peppers and onion up to 2 days before cooking.
- Store: Keep the fajita filling in an airtight container in the fridge for up to 4 days. Store the tortillas and toppings separately so they don’t get soggy.
- Freeze: Let the filling cool completely, then freeze it in a freezer-safe container for up to 3 months. The peppers and onions will be a little softer once thawed, but the filling will still be great in bowls, quesadillas, or salads.
- Reheat: Warm the filling in the microwave or in a covered skillet over medium-low heat until heated through. Add a spoonful of the cooking liquid so the chicken stays juicy.

Slow Cooker Chicken Fajitas
Ingredients
- 2 1/2 pounds boneless skinless chicken breast
- 15 ounces jarred salsa, choose one you like!

Instructions
- Add the chicken breast, salsa, taco seasoning, and lime juice to a 6-quart slow cooker. Gently mix.
- Cook on high for 2 1/2 to 3 hours or low heat for 5 to 6 hours. Remove chicken and shred with two forks. Return to slow cooker.
- Add the bell peppers and onions to the slow cooker and continue to cook for 20 to 30 minutes, or until the veggies are softened to your preference. Note: There will be extra liquid, so be sure to let the excess drip off before putting in tortillas.
- Serve on tortillas with your favorite toppings like avocado, guacamole, cilantro, sour cream or Greek yogurt.

You can add them at the same time as the chicken, but note that they’ll end up softer and I only recommend this if you’re using the high setting for 2-3 hours max.
