Slow Cooker Chicken Fajitas with juicy shredded chicken, crisp-tender peppers, and onions. With less than 10 minutes of hands-on prep, they’re an easy dinner for busy weeknights.

Juice of 1/2 lime(about 1 tablespoon juice)
3bell pepperssliced
1largeyellow onionsliced
For serving: flour tortillas, sour cream or plain Greek yogurt, cilantro, avocado
Instructions
Add the chicken breast, salsa, taco seasoning, and lime juice to a 6-quart slow cooker. Gently mix.
Cook on high for 2 1/2 to 3 hours or low heat for 5 to 6 hours. Remove chicken and shred with two forks. Return to slow cooker.
Add the bell peppers and onions to the slow cooker and continue to cook for 20 to 30 minutes, or until the veggies are softened to your preference. Note: There will be extra liquid, so be sure to let the excess drip off before putting in tortillas.
Serve on tortillas with your favorite toppings like avocado, guacamole, cilantro, sour cream or Greek yogurt.
Notes
Chicken: Cooking times can vary by slow cooker and the thickness of your chicken breasts. Start checking at 2½ hours on high or 5 hours on low. Chicken should reach 165°F.
Peppers and onions: Add them during the final 20–30 minutes of cooking so they stay crisp-tender. For softer vegetables, cook them a little longer. You can add them at the same time as the chicken, but note that they'll end up softer and I only recommend this if you're using the high setting for 2-3 hours max.
Extra liquid: Use tongs or a slotted spoon to transfer the fajita filling to your tortillas, leaving excess cooking liquid behind so the tortillas don't get soggy.
