Creamy high protein banana pudding made with simple ingredients like Greek yogurt, instant pudding mix and fresh banana slices. It’s an easy no bake dessert that’s packed with 23 grams of protein per serving!

There’s nothing better than an absolutely decadent high protein dessert. This one really has the best of both worlds because it still has all classic banana pudding flavors, just lighter and a bit more nutrition-packed (just like my Greek Yogurt and Pudding Dessert and Strawberry Banana Pudding too!).

Ingredients You’ll Need

  1. Banana: Fresh sliced banana is key! I like to choose a nice yellow banana that’s still firm and not too ripe so that it holds up if you make it ahead.
  2. Plain Greek yogurt: Greek yogurt adds protein and lots of thick creamy texture to this banana pudding.
  3. Milk: For the perfect creamy consistency.
  4. Vanilla protein powder: Just about any vanilla protein powder will work, just be sure to check the ingredients. Any protein powder that has digestive enzymes in it, like Clean Simple Eats (my favorite usually!), unfortunately doesn’t work and doesn’t allow the pudding the fully set.
  5. Vanilla wafer cookies: A classic layering ingredient in banana pudding. It adds texture, sweetness, and so much satisfaction to this pudding but you can leave it out if you want to keep things lighter.

How To Make High Protein Banana Pudding

  1. Add pudding ingredients. In a medium bowl add instant pudding, Greek yogurt and milk.

  1. Whisk until set. Whisk together for about 2 minutes until soft set. Whisk in protein powder last until fully combined.

  1. Layer. Divide evenly into two individual containers layered with sliced banana and vanilla wafers.

  1. Chill and set. Chill for at least 30-45 minutes to allow the cookies to soften a bit, or enjoy right away. Top with extra sliced bananas, whipped cream and crushed vanilla wafers and enjoy!

Tips for Success

  • Let the cookies soften. If you add vanilla wafers, give them at least 30-45 minutes in the fridge to allow them to soften a little. If you can give them a couple of hours or overnight, even better so that they soften into a cake-like texture.
  • Check your protein powder. Through lots of recipe testing we learned that protein powder that has digestive enzymes added (like Clean Simple Eats) doesn’t work for this recipe. Just give your protein powder ingredients a quick peek to make sure there’s none added.
  • Pudding set time. Instant pudding mix should give this pudding a soft set pretty immediately, but if it’s looking a little thin, add an extra 1/2 tbsp of pudding mix or give it an hour or two in the fridge to chill.

High Protein Banana Pudding

Ingredients 

  • 2 tbsp instant vanilla pudding mix, sugar-free or regular
  • 1 cup plain Greek yogurt
  • 1/2 cup milk
  • 1 scoop vanilla protein powder, *Note: Using a protein powder that has any digestive enzymes added to it like CSE will not set properly. See notes below if that's all you have.
  • 1 banana, sliced
  • vanilla wafers for layering, optional but recommended
  • whipped cream for topping

Instructions 

  • In a medium bowl, whisk together instant pudding, Greek yogurt and milk for 1-2 minutes. Pudding should be soft set within a minute or two.
  • Add protein powder last and whisk together until combined.
  • Divide evenly into two containers layered with sliced banana and vanilla wafer cookies.
  • Chill for at least 30-45 minutes (longer is even better) to allow the cookies to soften a bit before enjoying. 30-45 minutes will be slightly softened, while 2+ hours will transform into a cake-like texture.
  • Top with whipped cream, extra sliced bananas and a sprinkle of crushed cookies and enjoy!

Notes

  1. After many test rounds, we learned that you can’t use a protein powder with digestive enzymes added for this recipe (specifically Clean Simple Eats). Unfortunately it prevents the pudding mix from fully setting. If that’s all you have, I use 1/2-1 tbsp extra of instant pudding mix and allow it additional time to set in the fridge (at least 1-2 hours).
  2. If your pudding isn’t set enough after mixing in the protein powder (drips off the spoon versus a soft set like typical instant pudding), follow the same instructions and add 1/2-1 tbsp extra instant pudding mix and allow additional time in the fridge.

    This was delicious! So easy to make, the instructions were perfect. I had no idea that clean simple eats had enzymes so I followed the notes below. I couldn’t even wait for 30 minutes before I had to try it…. 10/10 rating! Can’t wait to have my son try this too. Great healthy, protein packed sweet treat. Highly recommend!!!
