Instructions
In a medium bowl, whisk together instant pudding, Greek yogurt and milk for 1-2 minutes. Pudding should be soft set within a minute or two.
Add protein powder last and whisk together until combined.
Divide evenly into two containers layered with sliced banana and vanilla wafer cookies.
Chill for at least 30-45 minutes (longer is even better) to allow the cookies to soften a bit before enjoying. 30-45 minutes will be slightly softened, while 2+ hours will transform into a cake-like texture.
Top with whipped cream, extra sliced bananas and a sprinkle of crushed cookies and enjoy!
Notes
After many test rounds, we learned that you can't use a protein powder with digestive enzymes added for this recipe (specifically Clean Simple Eats). Unfortunately it prevents the pudding mix from fully setting. If that's all you have, I use 1/2-1 tbsp extra of instant pudding mix and allow it additional time to set in the fridge (at least 1-2 hours).
If your pudding isn't set enough after mixing in the protein powder (drips off the spoon versus a soft set like typical instant pudding), follow the same instructions and add 1/2-1 tbsp extra instant pudding mix and allow additional time in the fridge.
