Ingredients

  • Cucumber: Any type of cucumber will work, but for sweet and crunchy cucumbers, I recommend using mini cucumbers or English cucumbers.
  • Mango: You can use classic red mangoes or the smaller, golden-yellow mangoes that you’ll find at the grocery store. Both are delicious and perfect for this recipe.
  • Fresh cilantro: I love cilantro in this recipe but if you have strong feelings about cilantro you can skip if it if you need to!
  • Red onion: Don’t worry, you’ll only use a small amount of finely diced red onions for this, so it’s not overpowering and adds the perfect amount of bite.
  • Honey lime vinaigrette: This honey lime dressing is light, refreshing and comes together in literally two minutes! All you’ll need is fresh lime juice, extra virgin olive oil, honey and white wine vinegar.

How To Make

  1. Dice the cucumber into small, bite-sized pieces. If using mini cucumbers or English cucumbers, simply dice them without peeling.
  2. Finely dice the red onion and set it aside.
  3. Cut the mango: Peel the mango and remove the pit. Dice the mango flesh into similar-sized pieces as the cucumber.
  4. Chop the cilantro leaves finely.
  5. In a large bowl, combine the diced cucumber, red onion, mango, and cilantro.
  6. In a separate small bowl, make your honey lime vinaigrette.
  7. Pour the dressing over the cucumber, mango, onion, and cilantro mixture. Gently toss to ensure all the ingredients are coated evenly with the dressing. Taste and adjust the seasoning if needed. Enjoy!
  8. Store leftovers in an airtight container. It’s even better the next day!

Variations

  • Make it a main course balanced meal by adding a whole grain like cooked quinoa and chopped grilled chicken breast.
  • Add some heat by adding some finely chopped jalapeño peppers, chili powder, a sprinkle of red pepper flakes or even just black pepper.
  • Add some creaminess by throwing in some diced creamy avocado.
  • Add crunch with chopped nuts like almonds, cashews or peanuts.
  • Change up the veggies and add diced sweet red bell pepper, finely diced broccoli, or green onions.
  • Add more zest via lemon juice, lemon zest or lime zest to brighten up the salad even more.
  • Serve with tortilla chips for a fun balanced snack.
