Dice the cucumber into small, bite-sized pieces. If using mini cucumbers or English cucumbers, simply dice them without peeling.
Finely dice the red onion and set it aside.
Cut the mango: Peel the mango and remove the pit. Dice the mango flesh into similar-sized pieces as the cucumber.
Chop the cilantro leaves finely.
In a large bowl, combine the diced cucumber, red onion, mango, and cilantro.
In a separate small bowl, make your honey lime vinaigrette.
Pour the dressing over the cucumber, mango, onion, and cilantro mixture. Gently toss to ensure all the ingredients are coated evenly with the dressing. Taste and adjust the seasoning if needed. Enjoy!
