This feels like something you’d order from an upscale restaurant but it’s quick and easy- perfect for busy nights. The creamy sauce is the real star here and no one will suspect it’s actually a lightened-up version.

This recipe comes together in less than 30 minutes from prep to table. It’s the only way I will be making pork chops from now on.

It’s also high protein! One serving has over 30 grams of protein for a really filling and satisfying dish. I like to balance out this garlicky goodness with an easy side like air fryer roasted vegetables, potatoes, or egg noodles.

Ingredients

Pork Chop ingredients

  • Boneless pork chops (center cut): Thinner and more lean than a traditional pork, center cut boneless chops work great for this recipe. They cook incredibly fast and pan searing, resting and finishing them in the sauce keeps them tender and juicy. 
  • Garlic powder: Starting this garlic themed recipe by seasoning the pork chops with garlic powder sets the flavor for the rest of the dish!
  • Salt & pepper: Salt and black pepper help to flavor the pork and become part of the base of the sauce later on.
  • Olive oil: Any neutral oil will work, I prefer olive or avocado. A little bit of oil helps to brown the pork chops and keep them from sticking to the pan.

Sauce Ingredients

  • Fresh garlic cloves: You’ll need at least a whole head of garlic, so you know it’s gotta be good! Fresh garlic gives this sauce a flavorful kick and sautéing it with mushrooms helps soften the flavor and texture without being overpowering. Feel free to add an extra ½ teaspoon of garlic powder in too if you want an even more extreme garlic flavor.
  • Baby bella mushrooms: Also known as cremini mushrooms, these give this dish more moisture and add umami flavor, making them an excellent pairing for the pork chops! Regular mushrooms work just fine too.
  • Baby spinach: Fresh spinach is a great compliment to this recipe adding in fiber, folate and other essential nutrients.
  • Olive oil: You only need a little oil to saute the mushrooms and garlic, plus it adds some healthy unsaturated fats to this recipe.
  • Butter: Just a tablespoon of butter helps create a roux and brown the flour for the base of our creamy sauce.
  • Flour: All-purpose flour works as a thickener for the creamy garlic sauce these pork chops are smothered in. You don’t need much to get the perfect texture, just a few tablespoons will do!
  • Milk: 2% works well here to achieve a creamy sauce without adding a lot of extra calories. Whole milk would also work well but I would advise against using 1% or skim because you just won’t get the same rich flavor. Using milk over something like chicken broth still keeps things light but adds tons of creaminess.
  • Heavy Cream: A little bit of heavy cream really ties this dish together. Just 2 tablespoons take this sauce to the next level. If you don’t have any on hand your sauce will still be good, but trust me this kicks it up!
  • Salt + Black pepper

How to make creamy garlic pork chops

  1. Heat a large skillet over medium high heat, add olive oil. Season both sides of the pork chops with garlic powder, salt and pepper. Sear pork chops in the heated skillet for 3-4 minutes, flip and cook for an additional 3-4 minutes until they are golden brown. Place the cooked pork chops on a plate and set aside.
  2. Reduce heat to medium, in the same pan add ½ tbsp olive oil, sliced mushrooms and garlic, saute 3-5 minutes or until the mushrooms are browned and softened. Stir frequently to scrape up any browned bits from the bottom of the pan.

  1. Move the garlic and mushrooms to one side of the pan. Melt butter in the open area, sprinkle with flour, stirring occasionally until the flour is browned 2-3 minutes. Slowly add the milk, whisking constantly, once smooth add salt, pepper, heavy cream and spinach.

  1. Return the pork chops and any juices to the pan. Cook for an additional 4-5 minutes or until the sauce has thickened, spinach is wilted and the internal temperature of pork reaches at least 145 degrees F. Cover the pork chops in sauce and enjoy!

How to store

Store leftovers in an airtight container in the fridge for up to 4 days. (If you have any!)

Serving suggestions

These creamy garlic pork chops are perfect for serving with:

  • Egg noodles or angel hair pasta
  • Roasted potatoes
  • Rice
  • Garlic bread

Variations

  • Swap out the protein! This recipe would work well with chicken breasts or thighs, turkey cutlets or even salmon.
  • Add a teaspoon of lemon juice at the end to bring in a bright lemony kick.
  • For creamy garlic parmesan pork chops stir in ¼ cup shredded parmesan cheese at the end and garnish with fresh parsley. Adding fresh parmesan makes the most delicious parmesan sauce variation!
  • Melt 1-2 oz cream cheese into the sauce before returning the pork chops to the pan for a thicker more complex sauce.
  • Slice the pork chops and serve them over pasta, rice or mashed potatoes and a simple side of extra veggies like green beans or broccoli to really impress your guests!
  • If you’re not a fan of mushrooms, skip them! Feel free to swap in a different veggie instead (thinly sliced carrots and onion work well).

    Woo hoo these are good. I think it would even work with chicken. I had it with couscous and it was yummy with the extra sauce. Iโ€™ll admit, I wanted to lick the plate. First time making a recipe from this site and I will definitely be looking for other healthy recipes from here.

    This is hands down my favorite recipe that Iโ€™ve made so far! I honestly never thought I liked pork chops, but this recipe completely changed my mind. It was so easy to make and absolutely delicious. My oldest was even asking for more, which is always a win! And my husband โ€” whoโ€™s a big pork chop fan โ€” thought they were amazing. Needless to say, this one made the whole family happy!
