Crispy Feta Brussels Sprouts with Balsamic

These feta brussel sprouts are perfectly crispy and super flavorful. They take less than 15 minutes, so it’s the perfect side dish for busy weeknights. You can make them in the oven or air fryer.

Why you’ll love these brussel sprouts

As a dietitian I’m a big believer in making sure your veggies are DELICIOUS. Is there anything worse than bland, boring vegetables?

These easy feta brussels sprouts are tossed in white balsamic vinegar, oil, and garlic. Then they’re topped with tangy feta cheese and cooked to crispy perfection. So. Good.

This simple recipe is not only one of my favorite veggie side dishes but also my favorite way to make brussels sprouts because they just come out so yummy every time! The combination of salty feta cheese and balsamic vinegar is one of my favorites.

This easy side dish is also super versatile and you can make them in the air fryer or oven. I prefer cooking brussels sprouts in the air fryer because they’re quicker, but either works great.

These are great for any day of the week but they’re also perfect for special occasions like a holiday meal! Prepare to turn your family’s brussels sprout haters into lovers with this one.

And PS- this nutritious side dish has 7g of protein and 4g of fiber per serving!

Ingredients

  1. Brussel sprouts: You’ll need fresh brussel sprouts, of course! You can halve them, quarter them or even use shredded brussel sprouts. Brussel sprouts can be a pain to wash and prep, so don’t be afraid to grab them pre-prepped to save some time!
  2. White balsamic vinegar: White balsamic vinegar is one of my favorite ingredients ever. It’s lighter and sweeter than regular balsamic vinegar but just as delicious. When it’s roasted or air fried it tastes more like a balsamic reduction and adds tons of great flavor.
  3. Avocado oil: I love using avocado oil for air frying or roasting because it has a high smoke point and is full of healthy fats, too! This one is my favorite from Amazon.
  4. Garlic: Fresh garlic adds delicious flavor to these veggies.
  5. Feta cheese: Tangy feta cheese is the perfect compliment to balsamic vinegar and brussel sprouts! When cooked, it turns golden brown and slightly melty.
  6. Salt + black pepper

How to make feta brussel sprouts

  1. Preheat air fryer to 350 degrees or oven to 425 degrees.
  2. In a medium bowl, add brussels sprouts, avocado oil, salt, pepper, garlic and balsamic vinegar. Toss gently until brussels are evenly coated.

Air fryer instructions

  1. Add brussel sprouts in a single layer to an air fryer basket lined with parchment paper, in a silicone basket, or lightly sprayed with oil.
  2. Air fry for 6-7 minutes.
  3. Add feta cheese and air fry for 5-6 additional minutes. Brussel leaves should be getting crispy and feta should be golden brown and melted.

Oven instructions

  1. Add brussel sprouts in an even layer on a prepared baking sheet lined with parchment paper or lightly sprayed with oil.
  2. Roast brussel sprouts for ~12 minutes, stirring halfway through.
  3. Add feta cheese and continue roasting for 7-8 more minutes until feta cheese is melty and golden brown. Roasted brussels sprouts should be crispy and golden brown.

Storage information

Store leftover brussels sprouts in an airtight container in the fridge for up to 5 days. You can even use leftovers for my Sauteéd Brussel Sprout Pasta Salad Bowls!

Variation ideas

  • Instead of feta top with other tangy cheeses like goat cheese, blue cheese or gorgonzola.
  • Use big shavings of parmesan cheese instead of feta cheese.
  • Instead of white balsamic, use regular balsamic vinegar.
  • Instead of balsamic vinegar, try lemon juice or some lemon zest for a tangy, citrus spin.
  • Add a tablespoon of honey or maple syrup for a slightly sweet version.
  • Top with a drizzle of balsamic glaze for even more flavor.
  • For sweet and spicy hot honey brussels sprouts, add a tablespoon of hot honey to the brussels or drizzle after they’re finished.
  • Sprinkle with red pepper flakes for a little kick!

  • 5-6 cups brussel sprouts, halved, quartered or sliced
  • 1 tbsp avocado oil, or olive oil
  • 2 tbsp white balsamic vinegar
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, finely minced or microplaned
  • 1/2 cup feta cheese, crumbled
