  • Eggs: Add protein and richness while keeping the quiche soft and sliceable.
  • Cottage cheese: The star of this recipe. Blending the cottage cheese into the eggs creates a creamy, custard-like base on top of adding protein and cheesy flavor.
  • Shredded cheddar cheese: Adds more cheesy flavor that pairs well with the veggies. You can substitute with another type of cheese like Monterey jack, Parmesan cheese, goat cheese, or feta cheese.
  • Ham: Adds protein and savory flavor.
  • Vegetables: You’ll need bell pepper (any color) and fresh spinach.
  • Garlic and onion powder: These pantry spices add plenty of flavor.

Variations

  • Swap the protein. Use cooked bacon, sausage, or even shredded chicken instead of ham.
  • Change the vegetables. Try mushrooms, broccoli, zucchini, kale, cherry tomatoes, chopped asparagus, or sun-dried tomatoes.
  • Make it vegetarian. Simply omit the ham and add extra veggies.
  • Add fresh herbs. To elevate the flavor, you can add a sprinkle of fresh herbs to the mixture, like fresh basil, parsley, or chives.
  • Add a kick of heat. To make it spicy, add diced jalapeños, red pepper flakes, or a dash of hot sauce.
  • Turn it into mini egg cups. Divide the mixture into a greased muffin tin and bake to make individual crustless quiche cups.

Jamie’s tips

Expert Recipe Tips

  • Blend the egg mixture until completely smooth. Fully blending the cottage cheese with the eggs creates a creamy texture and prevents any curds from remaining.
  • Don’t overload the quiche with mix-ins. Stick to 4 ounces of meat and 1 1/2 to 2 cups of vegetables.
  • Let it cool slightly before slicing. Allow the quiche to rest for 10 minutes so it firms up and slices cleanly.

Serving Suggestions

This crustless quiche is a versatile dish that works for any meal. It works just as well for a relaxed weekend brunch as it does for a quick weekday meal.

Serve it on it’s own or with a side dish.

  • For breakfast or brunch: Serve slices of the quiche with fresh fruit, yogurt, or roasted breakfast potatoes.
  • For lunch: Pair with a simple green salad, sliced tomatoes, or fresh vegetables.
  • For dinner: Serve alongside roasted vegetables, sautéed greens, or whole grain toast for a light but filling dinner.

How to Store

Allow the cottage cheese quiche to cool completely before storing. Store the slices in an airtight container in the fridge for up to 4 days.

To freeze, store in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating.

Reheat in the microwave for 30 to 60 seconds or in a 300°F oven until heated through. Avoid overheating, which can make the eggs dry.
