Blended cottage cheese gives this crustless quiche an incredibly creamy texture while boosting the protein. It's simple to prep and then enjoy throughout the week.

Instructions
Preheat the oven to 350 degrees F. Lightly coat a 9" round pie dish (or baking dish) with nonstick cooking spray or oil.
Add the eggs, cottage cheese, cheddar cheese, onion powder, garlic powder, salt, and black pepper to a high speed blender. Blend until smooth, about 30 seconds to 1 minute.
Stir in the ham, peppers, and spinach then pour into the prepared baking dish.
Bake for 50 to 60 minutes until the quiche is completely set in the middle. Cool slightly before serving.
Notes
Pan size matters. A 9-inch pie dish or similar baking dish works best for even cooking.
You can customize the meat, vegetables, or cheese based on what you have on hand.
Don't forget to let the quiche rest 10 to 15 minutes before serving.
