These easy homemade copycat “Just Crack An Egg” jars make the most incredible meal prep for breakfast. They’re made with fresh ingredients like veggies, potatoes, meat and cheese and are twice as filling as the kind you’ll find on the grocery store shelf.

Ingredients

  • Eggs: Any eggs will work and get added right before serving.
  • Yellow potatoes: I use yellow (yukon gold) or red bliss potatoes for this recipe because hold up well when stored and reheated.
  • Bell pepper + sweet onion: Diced bell pepper (any color) and onion adds fiber and fresh flavor.
  • Ham or turkey: For some extra flavor and more protein I like to add a little bit of meat. You can also add chopped cooked chicken.
  • Cheddar cheese: A must in these crack an eggs! Any other shredded cheese will work too.
  • Seasonings: Salt, pepper, garlic powder and onion powder.
  • Olive oil: A little oil adds healthy fats and roasts the potatoes.

Variation Ideas

  • Switch up the meat: Swap your meat for cooked sausage, bacon crumbles or even Canadian bacon in place of ham or turkey.
  • Cheddar and broccoli: Use 1 1/2 cups chopped cooked broccoli, 1/4 cup diced onion and 1/2 cup shredded cheese divided between jars.
  • Greek egg jars: Use feta cheese in place of cheddar, swap the peppers for diced tomatoes and add 1 cup baby spinach.
  • Lower carb: Omit the potatoes or swap for diced turnip or rutabaga.
  • Wrap it up: Instead of enjoying your eggs out of the jar pour it out onto a wrap. I love the Mission Carb Balance tortillas (burrito size) for even more protein and fiber.

How To Make Just Crack An Egg (Copycat)

  1. Prep. Line a baking sheet with parchment. Add potatoes and toss with oil & seasonings. Spread into an even layer. Bake for 10-15 minutes. Cool completely.

  1. Layer. Build your jars by dividing peppers, onions, ham, potatoes and cheese evenly between 4 large mouth pint jars. Secure lids and refrigerate until you’re ready to eat.

  1. Add eggs. When ready to serve, crack 2 eggs into each mason jar. Beat gently with a fork and mix with other ingredients until everything is coated with egg.

  1. Microwave. Microwave for 90 seconds, then beat with a fork to break apart egg and fillings. Microwave for additional 30 second increments until egg is cooked through, usually about 3 minutes or so total. Let cool for 1-2 minutes before eating. Note: Jar will be hot so be sure to use oven mitts when removing from the microwave.

How To Store

Keep mason jars with fillings in the fridge for up to 4 days. I recommend adding the eggs right before eating, but leftover cooked eggs can be stored for 2-3 days (reheat thoroughly before eating).

Recipe Tips

  • Let the potatoes cool. Make sure your roasted potatoes are fully cooled before adding to jars. If they are still warm they will add extra moisture and your veggies won’t stay fresh as long.
  • Dice everything small. Make sure your peppers and onions are diced small so that they cook quickly when they’re heated. Big pieces won’t have enough time to cook.
  • Be careful, jar is hot! The glass jars will be extremely HOT after spending 3 minutes in the microwave. Use oven mitts to avoid getting burned, and make sure to use a microwave-safe jar.

Copycat “Just Crack An Egg” Jars

A high protein prep ahead egg scramble built in a mason jar, perfect for an easy breakfast. Just add eggs, microwave and serve.

Equipment

  • 4 wide mouth microwave-safe jars with lids

Ingredients 

  • 2 medium yellow potatoes, washed, 1/4" dice about 2 cups
  • 2 tsp olive oil
  • 1 pinch each of garlic powder, onion powder, salt and pepper
  • 1 bell pepper, diced small
  • 1/2 sweet onion, diced small
  • 4 slices deli ham, diced small
  • 1/2 cup shredded cheddar cheese
  • 8 eggs, (to add right before serving)

Instructions 

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • On the prepared baking sheet, toss diced potatoes in olive oil. Season with spices.
  • Bake for 10-15 minutes and then allow to cool completely. Potatoes should be easily pierced with a fork.
  • In four microwave-safe wide mouth pint-sized mason jars (or other similarly sized microwave-safe jar), evenly divide potatoes, peppers, onions, ham and cheese. Refrigerate until ready to use (up to 4 days).
  • When ready to serve, crack 2 eggs into each mason jar. Beat gently with a fork and mix with other ingredients until everything is coated with egg.
  • Microwave for 90 seconds, then beat with a fork to break apart egg and fillings. Microwave another minute and repeat. Microwave for additional 30 second increments until egg is cooked through, usually about 3 minutes or so total. Let cool for 1-2 minutes before eating. Note: Jar will be hot so be sure to use oven mitts when removing from the microwave and handling jars.

Notes

Make sure to choose microwave-safe containers and handle carefully in the microwave, the jar will be hot!
