2medium yellow potatoeswashed, 1/4" dice about 2 cups
2tspolive oil
1pincheach of garlic powder, onion powder, salt and pepper
1bell pepperdiced small
1/2sweet oniondiced small
4slicesdeli hamdiced small
1/2cupshredded cheddar cheese
8eggs(to add right before serving)
Instructions
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
On the prepared baking sheet, toss diced potatoes in olive oil. Season with spices.
Bake for 10-15 minutes and then allow to cool completely. Potatoes should be easily pierced with a fork.
In four microwave-safe wide mouth pint-sized mason jars (or other similarly sized microwave-safe jar), evenly divide potatoes, peppers, onions, ham and cheese. Refrigerate until ready to use (up to 4 days).
When ready to serve, crack 2 eggs into each mason jar. Beat gently with a fork and mix with other ingredients until everything is coated with egg.
Microwave for 90 seconds, then beat with a fork to break apart egg and fillings. Microwave another minute and repeat. Microwave for additional 30 second increments until egg is cooked through, usually about 3 minutes or so total. Let cool for 1-2 minutes before eating. Note: Jar will be hot so be sure to use oven mitts when removing from the microwave and handling jars.

Make sure to choose microwave-safe containers and handle carefully in the microwave, the jar will be hot!
