These Chocolate Cottage Cheese Truffles have everything I want in a homemade truffle: a rich chocolate flavor, a creamy center, and a crisp chocolate shell. Blended cottage cheese adds a little extra protein and a fudgy texture. They’re easy to make ahead and even easier to grab whenever you want a little something sweet.

One of my favorite things cottage cheese is that it doesn’t just add protein. I’ve used it in everything from baked treats to chocolate desserts, and it has a way of creating a rich, creamy texture that surprises people every time.

These Cottage Cheese Truffles are one of the best examples. The cottage cheese blends into a smooth chocolate filling that’s rich, fudgy, and coated in a crisp layer of chocolate. They’re easy to make ahead, perfect for keeping in the fridge, and exactly the kind of little chocolate treat I reach for when I want something sweet.

Cottage Cheese is the Secret to Creamy Chocolate Truffles

Cottage cheese adds so much more than protein to desserts. Once it’s blended smooth, it creates a rich, velvety texture that’s surprisingly similar to traditional chocolate truffle filling.

Here’s why I love using it:

  • The filling is rich and creamy. Blended cottage cheese creates a smooth, fudgy center that stays soft after chilling instead of becoming dry or crumbly.
  • You won’t taste the cottage cheese. Once it’s blended with cocoa, vanilla, and chocolate, the cottage cheese completely disappears and you’re left with rich chocolate flavor.
  • Extra protein while still tasting like a truffle. Cottage cheese naturally adds protein, but the focus is still on creating a truffle that tastes indulgent enough to satisfy a chocolate craving.
  • No baking required. The filling comes together in just a few minutes before chilling, making these an easy dessert to prepare ahead of time.
  • Perfect to keep in the fridge. I love having a batch on hand because they’re easy to grab whenever I want something sweet after dinner or in the afternoon.

  • Cottage Cheese: The cottage cheese is what gives these truffles their creamy texture and added protein. Blend it until completely smooth before mixing in the dry ingredients. You won’t taste it, but it creates a rich, silky filling. I usually use 4% cottage cheese for the creamiest texture, through 2% cottage cheese (low fat) also works well.
  • Oat Flour or Almond Flour: Both work well, but they create slightly different truffles. Oat flour makes the center a little softer and more fudgy, while almond flour creates a slightly lighter, less fudgy texture. I usually reach for oat flour because it lets the chocolate flavor shine.
  • Chocolate Protein Powder: The protein powder adds a little extra protein while making the filling more chocolatey. I don’t recommend swapping it for more cocoa powder because the texture will be softer and the truffles won’t hold together quite as well. I use my favorite chocolate protein powder.
  • Chocolate Chips: Since the chocolate coating is one of the first things you taste, use a chocolate you’d happily eat on its own. Semi-sweet gives a nice balance, but dark chocolate works well too if you prefer a richer flavor.
  • Maple Syrup: Or honey works too. Depending on your protein powder and chocolate chips, you may want the extra tablespoon for a sweeter truffle.

How to Make Cottage Cheese Truffles

These no-bake Cottage Cheese Truffles come together in just a few simple steps. Blend the cottage cheese until smooth, stir together the filling, chill until firm, then coat each truffle in melted chocolate for a rich, silky treat.

  1. Add the cottage cheese, maple syrup, and vanilla extract to a glass bowl or measuring cup.

  1. Use an immersion blender to blend the mixture until completely smooth. Alternatively, you can blend everything in a blender.

  1. Transfer the cottage cheese mixture to a medium bowl. Mix in the oat or almond flour, protein powder, cocoa powder, and salt until well combined.

  1. Line a baking sheet with parchment paper. Scoop the mixture onto the parchment paper using a 1 tablespoon cookie scoop. It should make about 15 equal balls. Place in the freezer to firm up the mixture while you prepare the chocolate.

  1. Add the chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 20-30 second increments, stirring between increments, until the chocolate is completely melted and smooth.

  1. Use a fork to dip each truffle ball into the chocolate and return to the parchment lined pan. Repeat until all the truffles are coated with chocolate. Refrigerate for at least 30 minutes or until the chocolate is hardened before serving

Jamie’s Tips

Tips for the Best Cottage Cheese Truffles

  • Blend the cottage cheese until completely smooth. This is the most important step in the recipe. Any small curds that remain will be noticeable in the finished truffles, so blend until the mixture is completely silky before adding the dry ingredients.
  • Taste the filling before scooping. Protein powders vary quite a bit in sweetness. Before scooping the truffles, taste the filling and add the extra tablespoon of maple syrup if you think it needs it.
  • Chill the filling before dipping. Freezing the scooped truffles for at least 10 minutes makes them much easier to dip in melted chocolate. If the filling is too soft, the truffles can lose their shape as you coat them.
  • Use a cookie scoop for even truffles. A one-tablespoon cookie scoop makes it easy to portion the filling so every truffle is the same size. The truffles will look more polished and chill evenly.
  • Let the excess chocolate drip off. After dipping each truffle, gently tap the fork on the side of the bowl to let any extra chocolate drip away before placing it back on the parchment paper. This creates a thinner, smoother chocolate coating.
  • Refrigerate until the chocolate is completely set. The chocolate shell will firm up as it chills, giving you that satisfying snap when you bite into the velvety center. If you try to move the truffles too soon, the coating can smudge or lose its shine.

Storage and Make Ahead

These Cottage Cheese Truffles are one of my favorite desserts to make ahead because they store so well. I often keep a batch in the refrigerator for an easy chocolate treat throughout the week.

  • Refrigerate: Store the truffles in an airtight container in the refrigerator for up to 5 days.
  • Freeze: Freeze the truffles in a freezer-safe container for up to 3 months. Place parchment paper between layers to prevent them from sticking together.

Serve chilled: These truffles store and taste best straight from the refrigerator. The centers stay smooth and fudgy while the chocolate coating stays nice and crisp.

Make-Ahead Tip: These are a great dessert to prepare 1-2 days before a holiday, party, or special occasion. You can even make the filling ahead of time, scoop the truffles, and keep them in the freezer until you’re ready to dip them in chocolate.

Chocolate Cottage Cheese Truffles

Ingredients 

  • 1 cup cottage cheese
  • 2-3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup oat flour or almond flour, to make oat flour, blend oats until you get a fine powder
  • 1/4 cup chocolate protein powder, I like Clean Simple Eats
  • 2 tablespoons cocoa powder
  • 1/8 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Instructions 

  • Using a blender or immersion blender in a bowl, blend cottage cheese, maple syrup and vanilla extract until completely smooth.
  • Transfer cottage cheese mixture to a medium bowl. Mix in oat or almond flour, protein powder, cocoa powder and salt. Note: If using almond flour and your dough is too wet to be scooped, add a tablespoon or two of extra flour.
  • Line a baking sheet with parchment paper. Scoop mixture onto the parchment paper using a 1 tbsp cooking scoop. It should make about 15 equal balls. Place in freezer to firm up the mixture while you prepare the chocolate.
  • Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 20-30 second increments, stirring between until chocolate is completely melted and smooth.

Notes

  • Blend the cottage cheese until completely smooth. This creates the creamy texture and ensures you won’t notice any curds in the finished truffles.
  • Oat flour and almond flour both work well. Oat flour creates a softer, more fudgy center, while almond flour gives them a lighter, less fudgy center. Almond flour is a slightly wetter dough, so add a little bit of extra almond flour if needed.
  • Freeze the truffles for about 20 minutes before dipping so they’re firm enough to hold their shape in the melted chocolate.
