Rich, creamy Cottage Cheese Truffles with a smooth chocolate filling and crispy chocolate shell. Blended cottage cheese adds protein and a silky texture that's perfect for an easy no-bake dessert.
1cupoat flour or almond flourto make oat flour, blend oats until you get a fine powder
1/4cupchocolate protein powderI like Clean Simple Eats
2tablespoonscocoa powder
1/8teaspoonsalt
1cupsemi-sweet chocolate chips
1teaspooncoconut oil
Instructions
Using a blender or immersion blender in a bowl, blend cottage cheese, maple syrup and vanilla extract until completely smooth.
Transfer cottage cheese mixture to a medium bowl. Mix in oat or almond flour, protein powder, cocoa powder and salt. Note: If using almond flour and your dough is too wet to be scooped, add a tablespoon or two of extra flour.
Line a baking sheet with parchment paper. Scoop mixture onto the parchment paper using a 1 tbsp cooking scoop. It should make about 15 equal balls. Place in freezer to firm up the mixture while you prepare the chocolate.
Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 20-30 second increments, stirring between until chocolate is completely melted and smooth.
Dip each truffle ball into the chocolate and return to parchment lined pan. Note: You can use a fork to make the process a bit easier. Repeat until all truffles are coated with chocolate.
Refrigerate for at least 30 minutes or until chocolate is hardened up before serving.
Notes
Blend the cottage cheese until completely smooth. This creates the creamy texture and ensures you won't notice any curds in the finished truffles.
Oat flour and almond flour both work well. Oat flour creates a softer, more fudgy center, while almond flour gives them a lighter, less fudgy center. Almond flour is a slightly wetter dough, so add a little bit of extra almond flour if needed.
Freeze the truffles for about 20 minutes before dipping so they're firm enough to hold their shape in the melted chocolate.
