This Slow Cooker Marry Me Chicken features all the bold, creamy flavor of the classic, made slightly lighter so it's not overly heavy. It's the perfect dinner over pasta, rice, or veggies.
In a large measuring cup or medium bowl, whisk together the chicken broth, garlic, sundried tomatoes, tomato paste, crushed red pepper (if using), salt, and pepper. Pour over the chicken.
Cook on low heat for 2-3 hours. Check for doneness. Chicken is completely cooked through when a meat thermometer inserted into the thickest part of the chicken reads 165°F.
In a small bowl, whisk together the milk, cream, and cornstarch. Slowly pour the mixture into the crockpot, stirring to combine. Increase heat to high and cook for 10-15 minutes or until sauce is thickened.
Stir in the spinach, Parmesan, and lemon juice. Allow to cook uncovered, stirring occasionally until the spinach is wilted and the sauce is slightly thickened. Add additional salt + pepper to taste.
Serve over rice or noodles.
