Greek Yogurt Caesar Dressing
This creamy Greek yogurt Caesar salad dressing has all the creamy, tangy flavor of classic Caesar dressing, but with a lighter, higher-protein twist. It's an easy homemade dressing perfect for salads, wraps, bowls, or dipping.

Ingredients

plain full-fat Greek yogurt

grated Parmesan cheese

mayonnaise
more to taste

milk
add slowly to reach desired consistency (dressing should be pourable)

garlic
finely minced or microplanned

dijon mustard

freshly squeezed lemon juice

Worcestershire sauce

anchovy paste

Instructions
Add all ingredients to a medium bowl or large jar and whisk together until completely smooth.
Add additional milk if desired to reach your desired consistency. Should be thick, but pourable. Adjust seasonings to taste.
Toss with romaine, parmesan cheese, and croutons for an easy Caesar salad.
Notes
Use full-fat Greek yogurt for the creamiest texture.
Lower-fat versions can taste thinner and more tangy.
Freshly grated Parmesan works best.
Adjust the consistency to your liking.
Start with 2 teaspoons, and add milk gradually until the dressing is creamy but pourable.
Tase before adding extra salt.
The dressing thickens as it chills.
Whisk in a splash of milk before serving if needed.
Anchovy paste is optional.
It adds a more traditional Caesar flavor, but the dressing is still flavorful without it.
