Add all of your ingredients except for the herbs to a food processor. Blend on high until fully smooth and creamy. Taste test and add additional salt and/or lemon juice to taste.
Transfer whipped ricotta dip to a serving bowl and top with a generous drizzle of regular honey or hot honey, fresh rosemary and thyme.
Serve with crackers, crostini, pretzels, or fresh or roasted veggies.
