Place the chocolate chips in a microwave-safe container and melt the chocolate in 30-60 increments, stirring with a spoon in between each microwave session.
In a blender or food processor, add cottage cheese, melted chocolate chips, maple syrup, and vanilla extract.
Blend on high until smooth. Use a silicone scraper to scrape down the sides in between blending.
Next, line an 8x8" baking dish with parchment paper. Pour the fudge mixture into the dish and smooth evenly.
Set in the freezer for about 4 hours or until firm. Store leftovers in the freezer and allow to thaw slightly before serving.
Notes
To make lower sugar, choose low sugar chocolate chips and omit the maple syrup.
