Sloppy Joe Tater Tot Casserole
Lightened up and veggie-packed sloppy Joe meat topped with tater tots and cheddar cheese.

Ingredients

yellow onion

bell pepper

frozen riced cauliflower

tbsp
water

ketchup

Worcestershire sauce

yellow mustard
or dijon

frozen tater tots

shredded cheddar cheese

Instructions
Preheat oven to 425 degrees F. Lightly grease a 8x8” or 9x9” baking dish with non-stick cooking spray or oil, set aside.
Heat oil a large skillet over medium heat. Add meat and cook, breaking apart with a wooden spoon or spatula for 3-4 minutes.
Add onions, peppers, and carrots and sauté for an additional 4-5 minutes with the meat until veggies begin to soften and meat is cooked through.
Add seasonings and mix to combine.
Add riced cauliflower and water. Cover and cook for 8-10 minutes, stirring occasionally.
Remove pan from heat and stir in ketchup, mustard and worcestershire sauce.
Transfer meat and veggie mixture to prepared pan in an even layer. Top with frozen tater tots, evenly covering the entire filling.
Bake for 25 minutes until tater tots are golden brown.
Remove from oven and sprinkle evenly with cheese. Return casserole to the oven and bake an additional 3-5 minutes until cheese is melted.
Garnish with thinly sliced green onions if desired.
