1 ¼tsppumpkin pie spice
1-2tbspmaple syrup
1cupwhipped toppingTru Whip or Cool Whip, regular or sugar-free, thawed
optional: 1/2-1 scoop vanilla protein powderfor extra protein, add a splash of milk if needed
Instructions
In a large bowl add pumpkin, Greek yogurt, pudding mix, pumpkin pie spice and maple syrup. Mix with a whisk or hand mixer (for a fluffier texture) for 2 minutes. Note: Start with 1 tbsp maple syrup and adjust to your preferred sweetness at this step.
Gently fold in whipped topping with a rubber spatula. Do not over mix or you will lose the fluffy texture.
Serve immediately or refrigerate until ready. Enjoy with graham crackers, fresh fruit, layered in a trifle or by the bowlfull.
