Make the chia jam: Add raspberries, honey, and lemon juice to a saucepan over heat. Stir regularly to prevent burning. Cook for 5-8 minutes to break down the berries. Remove from heat, stir in chia seeds, and allow to thicken for at least 10 minutes.
In 4 individual jars, layer Greek yogurt, ~2 tbsp of chia jam, and then drizzle with PB and any other toppings you love like berries or granola.
