These No-Bake Chocolate Pumpkin Oat Bars have a soft pumpkin, peanut butter, and oat base topped with a thick layer of chocolate. They’re easy to make ahead, require no baking, and keep well in the fridge for an easy fall snack or treat.
1 1/2cupsoat flour(1 1/2 cups oats, blended into a fine powder)
1teaspoonpumpkin pie spice
1/2teaspoonground cinnamon
1cupsalted peanut butter
1/2cuppumpkin puree
1/4cupmaple syrup
1cupchocolate chips
1teaspooncoconut oil
Instructions
In a large bowl mix oat flour, pumpkin spice, and cinnamon until completely combined.
Add peanut butter, pumpkin puree, and maple syrup. Mix well until completely combined.
Line a 9x9" baking pan with parchment paper and press oat mixture in an even layer in the pan.
In a microwave-safe bowl, add chocolate chips and coconut oil. Heat in 15-30 second intervals until melted and smooth. Pour over the top of oat mixture.
Refrigerate for at least 2 hours to allow chocolate to harden and set. Slice into 16 even bars and store in the fridge.
Notes
Use a natural, drippy peanut butter for the best texture. A thicker peanut butter can make the base drier and harder to press into the pan.
To make oat flour, blend rolled oats until very finely ground so the bars hold together well.
Press the base firmly into the pan before adding the chocolate layer.
Chill for at least 1 hour, or until the chocolate is fully set and the bars are firm enough to slice cleanly.
Store in an airtight container in the refrigerator for up to 5 days.
