Ingredients
1.25lbcooked chicken breastshredded or chopped
1cupcottage cheese
2tbsplemon juice
1tbspdijon mustard
1/2tspmaple syrup
2tbspfresh dillfinely chopped
3tbspscallionsthinly sliced
1ribceleryfinely diced
1/8tspsaltmore to taste
1/4tspblack peppermore to taste
1/2tspgarlic powder
Instructions
In a blender or using an immersion blender in a small container, blend cottage cheese until smooth and creamy (you can also leave the cottage cheese with curds if you want to!). Pro tip: use an immersion blender and blend your cottage cheese right in the container it comes in! Use leftover blended cottage cheese to make cottage cheese ranch!
In a medium bowl, combine blended cottage cheese, fresh dill, scallions, celery, lemon juice, dijon mustard, maple syrup, and spices. Combine well.
Next, add the chicken breast and combine well with the dressing. Add additional salt and pepper to taste as needed and enjoy!
